Briam is a Greek, roasted vegetable dish made with potatoes, courgettes, red onion and tomatoes that is traditionally made with lots of olive oil.  Our version of this classic dish lowers the amount of fat and calories, while still maintaining all of the wonderful, Mediterranean flavours.

We’ve layered all of the vegetables in this dish to make it look really pretty, but if you’re short on time then you can just throw it all into a roasting dish instead!  Why not try adding some cheese to the top of your Briam for the last few minutes in the oven?  Some grated, mature cheddar or crumbled Feta gives this recipe a really tasty twist!

Serve as an accompaniment to a main meal for a filling dinner, or on its own with a side salad as a light lunch.

It sounds strange, but a sharp knife is much safer to cook with than a blunt one!  We use this knife sharpener from Amazon to keep ours in top shape – it’s got a suction cup to keep it attached to the countertop and stop it slipping!

How many calories are in this Briam?

There are 230 calories per portion in this Briam, which means it falls into our Everyday Light category. 

This Briam is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers. 

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Preheat the oven to 200°C.

Step 2

Pour the tinned tomatoes into the bottom of the roasting dish. Add the fresh basil and balsamic vinegar, season with salt and pepper to taste and mix.

Arrange the sliced vegetables in rows, alternating between potato, courgette and red onion.

Step 4

Spray the tops of the vegetables with low calorie cooking spray and sprinkle over the garlic and rosemary.

Step 5

Cover the top loosely with foil and place into the middle of a hot oven for 45 minutes.

Step 6

After 45 minutes remove the foil and place back in the oven for 15 minutes. When cooked, the potatoes should have softened but still retain their shape. There should also be a light golden colour to the top of the vegetables.

Step 7

Remove from the oven and sprinkle over some optional extra fresh basil to serve.

How do you know when Briam is cooked?

You should cook this Briam recipe in the oven for around an hour or until the potatoes have softened and the tops of the vegetables are a light golden brown.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Briam in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftovers of Briam in the fridge for approximately 3 days or so.

Can I freeze Briam?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Briam?

From chilled: Reheat in the microwave or an oven until piping hot.

From frozen: Defrost thoroughly and then reheat in the microwave or an oven until piping hot.

Ingredients

  • 400 g tin of chopped tomatoes
  • 1 tbsp balsamic vinegar
  • 500 g potato sliced into 1/2cm thick rounds (no need to peel)
  • 420 g courgettes sliced into 1cm thick rounds
  • 3 medium red onions peeled and sliced into 1/2cm slices
  • 2 tsp garlic granules
  • 1/2 tsp dried rosemary
  • handful of fresh basil finely chopped
  • low calorie cooking spray
  • salt and pepper to taste

    Hey Katie, a large lasagne type dish is perfect for this Briam. We often use a dish that is 30cm x 20cm but the one linked under the special equipment section of the recipe is great too. Hope that helps!
