to make the fritters
Step 1
First make the dip (see below) You can do this in advance and keep it in the fridge to save some time.
Step 2
Cook the broccoli, either microwave it for a minute or two, or steam/boil it. The broccoli should still be quite firm.
Step 3
In a bowl mix together the cooked broccoli and sweetcorn, and make sure all the moisture is drained.
Step 4
Add the chopped spring onion, grated sweet potato and chilli flakes and mix well.
Step 5
Season with some sea salt and freshly ground black pepper, then add one of the eggs. Stir well so that all the ingredients are mixed thoroughly.
Step 6
The mixture should be moist but not soggy, just enough to bind the ingredients. If it seems a bit too dry add the other egg.
Step 7
In a decent sized frying pan heat up some Low calorie cooking spray. Then using a 1/4 cup measure put 5 scoops in the hot pan, leaving enough space between each one so you can turn them easily.
Step 8
Cook for about 3 minutes, until they are golden brown on the bottom, then flip them over and cook them for another 3 minutes.
Step 9
Remove them from the pan, add some more low calorie cooking spray then cook the remaining mixture in the same way. There should be enough left for another 5 fritters.

I tried making individual fritters but my mixture wouldn’t bind so I made one big one and grilled the top

Hi Laura,
we’re sorry to hear you had difficulty getting the mixture to bind together. The size of the eggs used may have affected this. You could try adding a little more egg, to make a mixture that just binds together but is not too wet. Thanks for your feedback and hope you have better success if you make them again.

Just wanted to check – is the per portion calorie count the same as per fritter?
Holly LevellTuesday 26th May 2020
Hi Louise, the mixture for this recipe makes 10 fritters and serves two people. So the calories are per portion of 5 fritters with the dip. Hope that helps!

Hi
Silly Question but I assume you grate raw sweet potato and it will cook through when fried?
Thanks
L:ouise
SamTuesday 7th April 2020
I used raw potato and made the ingredients as dry as possible. The didn’t stick well with 2 eggs. 3 eggs were more successful.
maybe next time i will mash the potato to make it more malleable.
