Using reduced-fat Cheddar cheese helps us keep the calories down, without compromising on melty, cheesy goodness. We’ve found that the tart crispiness of Granny Smith apples is a match made in heaven with Cheddar’s mild tanginess, but there’s nothing to stop you using a different apple variety if you’d prefer.

Preheat the grill on the medium setting. Place one slice of bread on the grill pan rack and spread half of the cheese over in an even layer.
Place the apple slices over the cheese in a single layer. Spread the remaining cheese over the apple slices.
Place under the preheated grill for about 2 minutes until the cheese is melting and the apples are starting to soften a little but still retain some crispness.
Place the remaining slice of bread on top of the cheese and apple. Grill for a further minute until the bread is toasted and lightly golden.
Turn the toastie over and grill the other side for about 1 minute, or until toasted and lightly golden. Cut in half and serve at once alone, with a crisp mixed salad or bowl of soup.
