Easily one of the most popular and well-known salads in the world, our recipe has all the flavours of a classic Chicken and Bacon Caesar Salad without the calories!

Super tasty, super filling and super easy to make – you can have this fresh, tangy salad on the table in less than 20 minutes.

The best part? We’ve ditched a load of calories by swapping the classic high calorie dressing for our own garlic version, using fat free Greek yoghurt.

Seasoned chicken breast and bacon bits, drizzled with our home-made Caesar-style dressing on a bed of fresh lettuce. Sounds good, right?

You can even serve alongside a wholemeal bread roll, if you fancy it.

Oh, and don’t forget the cheese! We’ve used parmesan shavings to speed things up a little bit, but a thin slice from a Parmesan block will work just fine too.

Take the chicken breasts and slice them in half lengthways to make 4 thin pieces. Dip the chicken breast pieces onto the plate and rub until they have a light coating.

Add the chicken to the pan and cook for 5 minutes on each side, until the chicken is cooked through, shows no signs of pinkness and the outside is golden and slightly crispy. Set the chicken to one side.

How do you know when Chicken and Bacon Caesar Salad is cooked?

Ingredients

  • 2 skinless chicken breasts (approx. 150g/5oz each)
  • 4 bacon medallions
  • 300 g cos lettuce sliced
  • 8 cherry tomatoes quartered
  • 15 g Parmesan shavings
  • 1 tsp garlic granules
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • low calorie cooking spray

For the dressing

  • 3 tbsp fat free Greek yoghurt
  • 1 tbsp light mayonnaise
  • 1 tsp garlic granules
  • 2 tsp lemon juice
  • salt and black pepper to taste

Tip: We have used Parmesan shavings in this recipe for speed, however, you can just slice a block of Parmesan really thinly for the same results.
Tip: The chicken may take longer depending on the thickness of your chicken breast. Slice into the thickest part of the breast and check there is no pinkness remaining.
