These Chicken and Mango Burgers are just the ticket for barbecue season! We’ve piled our spice-infused chicken burgers high with a homemade, punchy mango chilli salsa, mildly-fiery Sriracha mayo and a helping of crunchy fresh salad.

By preparing your salsa and burger patties from scratch, you can keep the calories down and control the spice level – be warned, our salsa is definitely on the hotter side! 

To cool things down a bit, go easy on the amount of red chilli you add to your salsa bowl. After playing around with this recipe, we found that half of a deseeded red chilli is the perfect, taste bud tingling amount for us. 

It’s hard to believe they come bursting with so much flavour for only 246 calories each, bun included! Pair your zesty burgers with Coleslaw and Sweet Potato Fries for a restaurant-style feast at home.

How many calories are in this Chicken and Mango Burgers?

Preheat the oven to 180°C and line a baking tray with non-stick baking parchment.

Add the red onion and chilli to a food processor and pulse until coarsely chopped. Add to a mixing bowl.

Add the tomatoes, red pepper and mango to a food processor and pulse again until coarse (this won’t take as long as the onion so be careful not to over chop!). Add to the mixing bowl.

To the chopped vegetables, add the garlic, tomato puree, lime juice and sweetener. Stir to combine and season with salt and pepper. Leave to one side.

Add the chicken breast, breadcrumbs, soy sauce, garlic granules, onion powder and paprika to a food processor and pulse until smooth. Add to a bowl along with 5 tbsp of the mango salsa. Mix until combined.

Step 6

Divide the mixture into 6 and shape into 6 patties. Place onto the baking tray and cook for 25 minutes until cooked through.

While the burgers are cooking, combine the mayonnaise, Sriracha and lime juice in a small bowl and mix. Spread onto the top and bottom halves of each roll. Top the bottom half of the roll with tomatoes, onion and mixed leaves.

Add a little of the mango salsa and finish with the burger patties and place the top of the roll on top and serve with accompaniment of your choice.

How do you know when Chicken and Mango Burgers are cooked?

You’ll need to cook this Chicken and Mango Burgers for around 25 minutes, until the chicken is thoroughly cooked through and all juices run clear with no pinkness remaining.

Ingredients

For the mango salsa

  • 75 g fresh mango
  • 1 tomatoes
  • 45 g roasted red pepper from a jar
  • 1 garlic cloves peeled and crushed
  • ½ red chilli deseeded
  • ½ small red onion peeled
  • 1 tbsp tomato puree
  • 1 tsp lime juice
  • ¼ tsp white granulated sweetener
  • salt and pepper to taste

For the burgers

  • 250 g chicken breast
  • 50 g panko breadcrumbs
  • 1 tsp dark soy suace
  • 1 tsp garlic granules
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • salt and black pepper to taste

To serve

  • 6 bread rolls sliced in half
  • 1 tomato sliced
  • ½ small red onion peeled and sliced
  • bag of mixed salad leaves
  • 3 tbsp lightest mayonnaise
  • 1 tsp Sriracha sauce
  • 1 tsp lime juice

    Hi Kelly, we haven’t tried making Chicken and Mango Burgers with minced chicken but it should be fine. You may need to add a little beaten egg to the burger mixture if it doesn’t hold together well. The cooked burgers will have a coarser texture than if you used the chicken breasts. Hope this helps!
