This super simple Courgette Ribbon, Lemon and Feta Salad is packed full of fresh, zingy flavours and is the perfect summer side dish.
Peeling the courgette into ribbons means that your salad will look really impressive when served as a side dish at a barbecue or party – and no one will ever guess that it only took you 10 minutes to prepare!
This salad works really well as a light lunch or an accompaniment to pretty much any main meal. We love to serve it with Mediterranean inspired flavours as it really reminds us of our summer holiday!
