Our Halloumi Cous Cous Burgers with Salsa are so easy to make and are a fantastic addition to any barbecue, as well as being a really light dinner.
You will need a bit of patience when it comes to cooking these burgers. Make sure to keep them on a low heat and don’t touch them until a good crust has formed underneath. At this point you should be able to turn them over without breaking them apart!

Uncover the cous cous. Fluff up and add the halloumi, mint and eggs. Mix well and form into 4 burgers.
Step 5
Spray the frying pan with low calorie cooking spray again and, on a low heat, fry on each side (around 7 minutes per side) until golden.
Step 6
Serve in a bun or flat bread with the salsa spooned over the burgers and a dollop of fat free Greek yoghurt.
