Who’s here because they LOVE our Campfire Stew recipe? An oldie but a goodie, we thought it was about time to revisit the classic dish, and switch up the flavours for when you fancy a change.
The original recipe has a little kick to it, thanks to a dash of hot sauce and a pinch of chilli flakes. For this smoky-flavoured stew, we’ve left those fiery ingredients out, and swapped in some BBQ seasoning and a tin of beans in barbecue sauce.
This all combines with the smoked gammon, veggies and other ingredients to make a family-friendly stew that’s jam-packed with flavour and goodness. Thanks to the magic of an Instant Pot, the gammon gets fall-off-the-fork tender in a fraction of the time it takes to cook in the oven.
Perfect for a midweek meal, it’s delicious served with a simple bread roll, or with Creamy Mashed Potatoes to soak up all that lovely BBQ-infused sauce! You’ll see we’ve given you a tip on how to test the saltiness of your gammon the day before cooking it. If it needs soaking, you’ll want to set it in some cold water in the fridge the night before.

Step 1
You may need to soak the gammon joint overnight in cold water to remove any excess saltiness. Lock the lid in place and set the vent to ‘sealing’. Set the pressure to ‘high’ and cook for 45 minutes. Allow the pressure to release naturally and when the valve has dropped, open the lid.
Step 4
The stew will be ready when the gammon is tender, falls apart and the sauce has thickened. Use two forks to shred the gammon and mix in. If the stew is not thick enough, set to ‘sauté’ and continue to cook for a few minutes longer. Serve.

You’ll need to cook this Instant Pot BBQ Gammon Stew for 45 minutes, until the gammon is fall-off-the-fork tender and easy to shred. The sauce should have reduced and thickened. If it looks a little thick you can add some water; if it’s too runny, leave the stew in the Instant Pot a little longer on the sauté setting.
