Traditionally Lasagne is made by interweaving layers of pasta with layers of bolognese sauce, usually consisting of minced beef and tomatoes.
However, to make this Lasagne slimming friendly we have packed it full of vegetables. We advise using good quality tinned tomatoes for the sauce as some can be quite watery and acidic. It really does make a big difference to the finished dish!
One of the most difficult parts of Lasagne to make slimming friendly is the white sauce. We’ve tried quite a few versions of this sauce, from blitzed cottage cheese to quark, but this is probably the best one so far. It’s well worth giving it a go!

This Lasagne recipe doesn’t require any special kitchen gadgets or tools to make. It does involve cutting up lots of vegetables so we would advise using a nice sharp knife to make the task a little easier.

How many calories are in this Lasagne recipe?
There are 466 calories in each portion of this Lasagne. If you order Lasagne in Wetherspoons it will clock up around 900 calories, so this is an incredible saving at almost half the amount!
As there are over 400 calories in this dish, it falls into our Weekly Indulgence category.
This Lasagne is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
To make the sauce
Step 1
Heat a pan and spray with low calorie cooking spray. Add the onion, celery, carrots and garlic to the pan and cook for a few minutes, until they start to soften.
Step 2
Add the mince, and cook until it starts to brown.
Step 3
Add the herbs and Worcestershire sauce, then continue to cook for a few more minutes.
Step 4
Add the courgette and peppers and give the mixture a stir.
Step 5
Add the mushrooms and fry for about 5 minutes.
Step 6
Stir in the tomato puree, Oxo cubes and tinned tomatoes. Add 200 ml water and stir well.
Step 7
Put the lid on the pan and simmer for 20-30 minutes.
Step 8
Adjust seasoning if necessary.
Step 9
Spread a layer of the mince mixture on the bottom of a decent sized oven proof dish, then add a layer of lasagne sheets, then repeat until you reach the top of the dish, ending with a layer of lasagne sheets. Make sure you leave enough room for the sauce.
To make the white sauce
Step 1
Mix the yogurt, eggs, mustard powder and salt to taste. Beat well to make sure it’s mixed smooth.
Step 2
Pour this sauce over the top of the lasagne sheets, then sprinkle with the grated cheese.
Step 3
Cook in the oven for 25-30 minutes, on 190-200°C.
Step 4
Remove from the oven and allow to rest for 5-10 minutes, so it is easier to portion.

How do you know when the Lasagne is cooked?
The lasagne is cooked when the top is golden brown and the cheese has melted. Also, when you stab it with a knife the lasagne sheets should be soft, not hard and crunchy.
Can I freeze this Lasagne?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat this Lasagne?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Cooked this on Saturday and must say I thoroughly enjoyed it. I didn’t have and mustard powder so just mixed in 2 tsp of English mustard into the yoghurt instead before adding the eggs.

Hey Emz, you will still need 200ml of boiling water for this recipe if you only use 1 stock cube instead of 2. You could also try the reduced salt stock cubes that are available in most supermarkets, hope that helps!

Hi I want to make this for 3 instead of 4 but when I change the number to suit how many I’m making it for it still says 200ml of water to add and 6 lasagna sheets. Is this right to use both of them for making it for 3 people instead of 6? Thank you 🙂

Hi Tracey, If the beef sauce is a little too watery ensure you reduce it down a little in the pan before you layer up the lasagne. Just let it bubble without the lid until it is has thickened. Hope that helps!

Hi Jackie, we don’t have a stand alone GF recipe for the Lasagne, however if you swap the lasagne sheets and stock cubes for gluten free alternatives it will still work great! Make sure to double and triple check all of your ingredients if you’re cooking for people with allergies. Hope that helps!

Hi Sharon, thanks for your question about the sauce. The sauce contains eggs, which when overheated, can scramble.This maybe caused by your oven being too hot.Ovens do vary and maybe yours is running a little hot? You could try lowering the temperature to about 180ºC and see if that helps. Hope you get a better result if you try this again!
