This Lemon Tiramisu is the perfect pudding to wrap up any Italian-inspired dinner! There’s nothing wrong with a classic, coffee-flavoured tiramisu, but we have to say, this refreshing zesty twist feels extra special!
To save on calories, you won’t find full-fat mascarpone on our ingredients list. We’ve given our lemon-soaked sponge fingers their irresistible creaminess using a clever blend of ricotta, lip-smacking lemon curd, sweetener and homemade lemon syrup.
Be careful not to soak your sponge fingers for too long. You don’t want them to become soggy. You’ll add an extra drizzle of lemon curd on top right before serving anyway, since you can never have too much of that luxurious-tasting ‘zing’!

How many calories are in this Lemon Tiramisu?
There are 220 calories per portion in this Lemon Tiramisu recipe, which means it falls into our Everyday Light recipe category. If you’re counting calories or following one of the popular diet plans like Weight Watchers, this recipe fits in perfectly!

Step 1
Remove all the white pith from the lemon peel using a small sharp knife. If the white pith remains it will make the syrup bitter. Place the peel in a small saucepan and add the water. Place on a low heat and gently simmer for 10 minutes to infuse the flavour and colour of the lemon peel.
Step 2
Remove from the heat, strain the syrup into a bowl and discard the lemon peel. Add the sweetener or sugar and stir until dissolved. Stir in the lemon juice and leave to cool for 5 minutes. Set aside.
Step 3
Put the ricotta and 4 tbsp of lemon curd in a small mixing bowl and beat together with a wooden spoon until smooth. Set aside.
Step 4
Dip the sponge finger halves in the lemon syrup, allowing them to soak up the syrup but not to become mushy. Place two sponge finger halves in the bottom of each dish.
Step 5
Divide half of the filling between the four dishes and roughly spread over the sponge fingers. Add a teaspoonful of lemon curd to each dish and roughly swirl into the filling.
Step 6
Place another two sponge finger halves in each dish and top with the remaining creamy lemon filling. Roughly spread over the sponge fingers and add a teaspoonful of lemon curd to the top of each tiramisu, swirling it roughly on top. Chill for 2 hours and decorate each tiramisu with half a lemon slice.

How do you know when Lemon Tiramisu is ready?
This Lemon Tiramisu is ready to enjoy when the layers are all assembled, and it’s been left to chill in the fridge for a minimum of 2 hours.
The only part you’ll need to cook is the lemon syrup. This takes 10-15 minutes of simmering in a saucepan.

I’ve seen on the filling it says lemon curd twice one as 4 tablespoons and the other as 4 teaspoons. Which one do you use?

Hey Ashleigh, the recipe uses 4 tbsp lemon curd in the filling and 4 tsp lemon curd to decorate the top of each finished tiramisu. Hope that helps!
