If you don’t have a food processor, how about investing a hand blender? This is the same one we used to make these burgers as it has a food processor attachment.
How many calories are in these Melt-in-the-Middle Bacon Cheeseburgers?

Step 1
Add half a red onion to your food processor and blitz.
Step 2
Add the beef mince, salt and pepper, garlic granules, mustard powder, Worcestershire sauce or Henderson’s relish, stock cube, soy sauce and egg. Give it a whizz until all the ingredients are well mixed.
Step 3
Grab a big handful of the mixture and begin to shape it around a Babybel cheese. Make sure there are no cracks or gaps, you don’t want all that lovely cheese to escape!
Step 4
Spray a large frying pan with low-calorie cooking spray and set on a medium heat. Add your burgers and cook gently – you want them to be cooked through without being burnt on the outside. Cook for 5-6 minutes, flip and cook for a further 5 minutes. Alternatively crack out the BBQ and get grilling!
Step 5
Add the bacon medallions to the pan and fry for 6-8 minutes.
Step 6
Assemble your burgers and bacon in the rolls and add any salad or sauce you like!

How do you know when Melt-in-the-Middle Bacon Cheeseburgers are cooked?
Cook your burgers gently – you want them to be cooked through, with enough heat to create a melting middle, but not burnt on the outside.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Melt-in-the-Middle Bacon Cheeseburgers in the fridge?
Once you’ve put them out, ideally you should eat these burgers straight away.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Melt-in-the-Middle Bacon Cheeseburgers in the fridge for approximately 3 days or so.
Can I freeze these Melt-in-the-Middle Bacon Cheeseburgers?
Yes you can, but we would only recommend freezing before cooking. You can wrap each raw patty individually in foil and place in the freezer.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat these Melt-in-the-Middle Bacon Cheeseburgers?
We wouldn’t recommend reheating the burgers once they have been cooked.
If you have frozen the uncooked burgers, allow them to fully defrost and then follow the cooking instructions from step 4 in this recipe.

These were amazing 🤩…..I browned the burgers in a frying pan, wrapped them individually in foil and cooked for 20 mins in the oven (180 fan) before unwrapping and adding the cooked bacon medallions on top and for those not calories counting in the household I added a slice of reduced fat cheddar. So succulent and tasty. Served in a brioche bun for everyone except me and I had sautéed mushrooms in fry light and a green salad with mine along with rustic potato wedges which were really tasty. Great recipe and would recommend. I will make again but may try mozzarella in the middle as babybel didn’t totally melt. Thank you for such a fabulous recipe 😊

Hi Lizzie, one medium wholemeal bread roll would typically contain around 140 – 150 calories, depending on the brand and which source you take your nutritional values from. You could use onion granules if you prefer, but the blitzed onion add a little moisture to the burgers so you may find them a bit dryer than usual if you miss them out.

Absolutely delicious. Not even joking taste better than any restaurant burger.
I used a small piece of light mozerella instead of babybel and cooked in the oven on 190 for 25 minutes. Came out perfect!

I usually make burgers with hand mixing but was anxious to try your recipe. I thought that using the processor toughened the meat but the seasoning was really good. Next time I will use onion granules and mix by hand. Cheese was a good touch.
