Sometimes you just need a sweet treat in a hurry! Luckily, these Microwave Biscoff Lava Cakes are made in the microwave, so they take less than 2 minutes to cook.  

Flavoured with the popular biscuit spread, these delightful little puds have a rich caramel taste, with just a hint of sweet spices. With their oozy Biscoff centres, you’d never know these were slimming friendly!

They’re delicious served on their own, but you can always add some Custard or a swirl of reduced fat aerosol cream.

This Microwave Biscoff Lava Cakes recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Step 1

Grease 4 x 125ml ramekin dishes with a little extra reduced fat spread.

Step 2

Place the self raising flour, sweetener, Biscoff spread, reduced fat spread, eggs and caramel flavouring in a medium mixing bowl. Beat together for 1 – 2 minutes using an electric whisk or wooden spoon until smooth and creamy.

Divide the mixture between the 4 ramekin dishes. Drop a teaspoonful of Biscoff spread into the centre of each.

Step 4

Place all 4 ramekins on the microwave turntable, evenly spaced apart. Cover loosely with cling film and cook on high for 1 1/2 – 2 minutes. Check on the cakes after about a minute and continue cooking if needed. The cakes will be ready when they’re risen and spongy but still runny in the centre. Leave to stand for 5 minutes, then remove the cling film.

Dust with a little icing sugar and serve at once. Serve alone, or with a swirl of reduced fat aerosol cream or a little custard.

How do you know when Microwave Biscoff Lava Cakes are cooked?

You’ll need to cook these Microwave Biscoff Lava Cakes for between 1 and 2 minutes until the cakes have risen but are still gooey in the middle. Take care not to overcook them and remove them from the microwave while the centres are still oozy. Allow them to stand for 5 minutes before serving.

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Cover the ramekins in cling film and place them inside a freezer proof container.
  • Don’t forget to add a label with what it is, and what date you put it in the freezer!

From chilled: Cover the ramekin loosely with cling film and reheat in the microwave for 30 seconds. 

From frozen: Allow to defrost overnight in the fridge and reheat from chilled following the instructions above.

Ingredients

  • 45 g self raising flour
  • 25 g white granulated sweetener
  • 60 g smooth Biscoff spread
  • 45 g reduced fat spread
  • 2 medium eggs
  • 1 tsp caramel flavouring
  • 4 tsp smooth Biscoff spread, for the centre
  • ¼ tsp icing sugar, for dusting
  • a little extra reduced fat spread, for greasing

Recipe notes

Tip: Take care not to overcook otherwise you won't get a gooey centre. Follow the timings carefully and remove from the oven whilst still runny in the centre. Leave to stand for 5 minutes and then you should have the perfect gooey centre.
Tip: Use white granulated sweetener that has the same texture and weight as sugar.

Hi,
I was wondering which low fat spread you use and which caramel flavouring, as I suppose different makes will produce different results

    Hi Michelle, we used Flora Light and Foodie Flavours Caramel Flavouring, although there are other brands available that should work just as well. Hope this helps.
