Mint and lamb is a classic pairing, but it doesn’t have to be saved for your Sunday roast! These Minted Lamb Kebabs will remind you of Mediterranean holidays, and they’re so quick and easy to make!

We’ve marinated chunks of tender lamb in a mixture of mint and yoghurt, and threaded them onto skewers with onion and green peppers. The kebabs don’t take long to cook but it’s worth letting them soak in the marinade for at least 20 minutes. It adds so much flavour!

Lamb isn’t the leanest meat so it’s easy to think it can’t be slimming friendly. These kebabs use fat free Greek yoghurt and lots of veg so we’re not adding too many extra calories – perfect if you’re trying to eat healthy!

These kebabs can be cooked on the grill, in the oven or even on the BBQ! An ideal midweek dinner, they pair perfectly with rice – or you can make an even lighter meal and serve with a fresh green salad.

In a mixing bowl, add 100g of the yoghurt along with 2 tsp of the mint sauce, cumin, salt and pepper. Mix well.

Add the diced lamb and mix well. Cover and place in the fridge for 20 minutes to marinate.

Step 4

Thread 4 pieces of the lamb onto the skewers, alternating with a piece of green pepper and onion. Repeat until you have filled all 8 skewers.

Step 5

Place the skewers onto a baking tray and cook under a grill for 10 minutes, turning over halfway to ensure even cooking.

Step 6

While the lamb is cooking, mix 2 tsp of the mint sauce with the remainder of the Greek yoghurt.

Serve the kebabs garnished with the mint yoghurt, lemon wedges and fresh mint.

How do you know when Minted Lamb Kebabs are cooked?

These will need to be cooked on the grill for around 10 mins, turning halfway through to make sure the lamb cooks evenly. Make sure the lamb is cooked all the way through before serving.

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

Or you reheat in an oven pre-heated to 200°C for around 5 minutes, until piping hot throughout.

From frozen: Allow to defrost thoroughly, and reheat as above.

Ingredients

  • 450 g lean diced lamb all visible fat removed
  • 1 green pepper deseeded and cut into chunks
  • 1 onion peeled and cut into chunks
  • 4 tsp mint sauce
  • 200 g fat free Greek yoghurt
  • 1/2 tsp ground cumin
  • pinch of salt
  • pinch of freshly ground black pepper
  • 10 g fresh mint
  • 1 lemon cut into wedges

Instructions

Can you use any plain yoghurt or does it have to be Greek yoghurt?

    Hi Sophie, Greek yoghurt is thicker than other plain yoghurts so will stick to and coat the lamb well. You could try using plain yoghurt but it might not coat as well. Hope this helps!

How do I cook the lamb kebabs in the oven please

    Hey Karen, we haven’t tested this recipe cooked in the oven but would suggest a temperature of 190ºC for 15-20 minutes until the lamb is evenly cooked through. Hope that helps!
