This Pineapple Salsa is the perfect summer dish, bringing bright colours and flavours to your table. Fruit in a salsa may sound a bit odd, but when you try it we think you’ll love it as much as a more traditional tomato salsa.

The pineapple adds a lovely sweetness and acidity to this salsa, plus you can add as much or as little chilli as you want depending on how spicy you like it. It’s the perfect combination of sweet and spicy.

Our Pineapple Salsa is at its best if you prepare it a couple of hours in advance, just to let the flavours mingle. However, if you’re in a hurry, there’s nothing to stop you preparing and eating it straight away.

Ingredients

  • 400 g fresh pineapple peeled, cored and finely chopped
  • ½ red pepper deseeded and finely chopped
  • ½ chilli deseeded and finely chopped
  • 4 radish finely chopped
  • 8 cm piece of cucumber finely chopped
  • 3 spring onions finely sliced
  • 4 cherry tomatoes finely chopped
  • 1 handful fresh mint stalks removed and finely chopped
  • 1 handful fresh coriander stalks removed and finely chopped
  • salt and pepper to taste

What are the tortilla chips that are on the picture with the salsa? Is there a recipe for them?

    Hey Caroline, the tortilla chips are made from tortilla wraps. We don’t have a recipe for them but if you cut up a wrap into triangles and spray with low calorie cooking spray, season with a seasoning of your choice and cook for about 10 minutes at 190ºC until crisp. Hope that helps!

This is seriously good, mega mega yummy!!! Made it to go alongside jerk chicken and Nando’s rice and it was perfect (and my favourite part of the meal!) Everyone loves it and I’ll definitely be making it again.
