Pumpkin Spiced Latte Waffles Recipe

It’s that time of year when we start seeing lots of Pumpkin Spiced recipes! So we thought we’d kick things off with these Pumpkin Spiced Latte Waffles.

If you can’t get hold of a pumpkin you can use some butternut squash instead. It works just as well.

Making the Puree

Just chop your squash/pumkin up pretty fine, then place in a microwave friendly tub with a lid & microwave on full power for 3 minutes.

Be careful when you lift it out as it will be VERY hot! Attack with a stick blender/blender & mix in the shot of coffee & spices. Takes about 4 minutes in all & much quicker than passing it through a sieve.

You can use a waffle maker for these Pumpkin Spiced Latte Waffles, if you have one, but we just used one of these waffle moulds from Amazon.

We like to add a boost to the coffee flavour in these Pumpkin Spiced Latte Waffles by adding some coffee extract.

You can pick this up in most supermarkets, but also online at Amazon!

What is Sukrin?

Sukrin 1 is an all natural sugar alternative that doesn’t have that nasty artificial taste that other artificial sweeteners do. If you haven’t tried it yet you really should! You can buy it fromAmazon.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.
