Imagine coming home to the irresistible smell of tender beef steak cooked low and slow until it just falls apart. You can leave the filling of this Slow Cooker Steak and Stilton Pie to simmer all day, so you only need to add the filo pastry topping when you get home. 

We’ve kept this recipe nice and light by using crispy filo pastry rather than buttery shortcrust. This cuts down on the calories without losing any of the flavour, and keeps this recipe hearty and filling. 

You can let your slow cooker do all the hard work here, and then you’ll only need to finish the dish off with a few simple steps before dinnertime. This recipe is comfort food at its best, and it tastes far more indulgent than it really is!

We love to serve this Slow Cooker Steak and Stilton Pie instead of a traditional Sunday roast, with a good dollop of mash and plenty of veg – it’s SO good!

Do you need any special ingredients to make Slow Cooker Steak and Stilton Pie?

You will need a red wine stock pot to make this recipe. These can be found alongside the stock cubes in most supermarkets. Using a red wine stock pot rather than red wine helps to keep this recipe slimming friendly. 

If you prefer, you can substitute the stock pot for 100ml of red wine (just remember to reduce the amount of water used in your beef stock by 100ml so there is not too much liquid in your filling). 

If you can’t get hold of a red wine stock pot you can also substitute this for a beef stock cube with a splash of red wine vinegar.

Easy to do and a tasty winter dish
I whisk the egg in a bowl, scrunch the pastry up and then dip it into the egg before placing on the pie. It is easier than brushing the pastry and I achieve a more even spread with less mess.
So scrumptious!
I couldn't get filo pastry so I used light puff instead. I had a bit left over so I made some mini Nutella swirls! Yum yum.
This is devine! Another Family favourite!
Easy to do, tastes incredible! I added my filling to tortilla boats, easy to serve, but also made it easy to pack the spare ones up for lunch the next day. Added a little cheese on top - remember to add the calories for the boats and cheese!
Unbelievablely tasty!
I made the filling and portioned before freezing. Took a portion out to defrost the night before and added the filo pastry just before going in the oven. Perfect batch cook for those who live alone like me! Delicious

Add the stock cube to the water. Deglaze the pan with a little stock, scraping up and mixing in any bits off the bottom of the pan, and then spray again with low calorie cooking spray. Add the onions, garlic and thyme and saute for 5 minutes.

Step 4

Add the onions to the slow cooker, along with the carrots, celery, remaining stock, stock pot and Henderson’s relish.

Cook for 4 hours on high or 7 hours on low.

Half an hour before the end of cooking time, stir in the mushrooms and cook for the remaining 30 minutes.

Add the crumbled Stilton and stir until melted. Season with some black pepper.

Pour into an ovenproof dish, and preheat the oven to 180°C.

Cut the filo sheets into strips, scrunch up and place on top of the pie, covering the filling completely. Use a pastry brush to egg wash the top.

Place on a baking tray to catch any spills in case the filling bubbles over, and pop in the oven for 15 minutes, or until the pastry is golden and crisp. Serve!

How do you know when Slow Cooker Steak and Stilton Pie is cooked?

Ingredients

  • 400 g lean, diced stewing steak, all visible fat removed
  • 1 medium onion, peeled and sliced
  • 2 medium carrots, peeled and sliced
  • 1 stick of celery, sliced
  • 150 g button mushrooms (or larger ones, thickly sliced)
  • 1 clove of garlic, peeled and crushed
  • ½ tsp dried thyme
  • 1 tbsp Henderson's relish (or Worcestershire sauce)
  • 1 tbsp plain flour
  • 1 beef stock cube,
  • 300 ml boiling water
  • 1 red wine stock pot
  • 75 g Stilton cheese, crumb
  • black pepper
  • 1 medium egg, beaten
  • 2 x 40g ready rolled sheets of filo pastry

When I double the recipe to 8 it doubles the beef stock cubes but it still remains at 300ml of water is this correct?

    Hey Lorraine, I’ve separated the stock cube and water so this will now alter when changing the portion size, hope that helps!

Would you be able to switch the stilton cheese out for a milder crumbly cheese like feta?

    Hi Beth, although feta is a crumbly cheese, it won’t melt into the gravy like Stilton does. Using feta would also change the flavour of the dish. Hope this helps!
