Just in case you’ve ever wished the roasties on your plate had a bit more flavour, we’ve come up with this show-stopping Stilton Roast Potatoes recipe. To make the most of your spuds, we’ve tossed them with crumbly Stilton cheese and fresh spring onions, then baked them until they’re perfectly crisp on the outside and fluffy in the middle.
Stilton has a distinctive flavour, with a strong, slightly nutty taste, so it’s no surprise it really ramps up the flavour of these roasties! The mild flavour of spring onions helps to balance things out, so every bite is cheesy and delicious.
You can add these to your usual Sunday roast dinner anytime you feel like switching the flavours up. In fact, since they feel a little bit fancy, they’re ideal for special occasions too! Since we’re using creamy, real Stilton cheese for this recipe, it’s a little bit higher in calories than our usual side dishes (but still loads lighter than other spuds that come drenched in oil or fat).

Step 1
Preheat the oven to 200°C. Put the potatoes in a saucepan of salted cold water, bring to the boil and cook for 10 minutes, until just soft, but still holding their shape.
Step 2
Drain in a colander and leave for 5 minutes, then toss gently in the colander to fluff up the edges. Put the potatoes on a baking tray and spray with plenty of low-calorie cooking spray. Sprinkle over the garlic granules, onion powder, salt and pepper, and toss to coat. Roast for 15 minutes.
Step 3
Remove from the oven, shake and cook for a further 15 minutes until golden and crispy around the edges.
Step 4
Add the spring onions, crumble over the Stilton, and pop back into the oven for 5-10 minutes until the cheese is melted and golden. Sprinkle over the parsley and serve!
