Full of goodness, the juicy pineapple and zingy lime balance the creaminess of the feta, with fluffy, light quinoa to fill you up.
Hearty enough to be served on its own for lunch, you could also serve up a smaller portion as a side dish. The fruity flavours taste incredible paired with grilled or BBQ meat, or keep it simple and add a fresh wholemeal roll.
Quinoa are tiny gluten free seeds that are packed with protein and other goodness! So easy to cook, they have a slightly nutty flavour and make a great, healthy alternative to rice and pasta.
If you prefer, you could switch the quinoa for couscous in this recipe – the result will still be delicious! Just remember to adjust the calories.

I do not like coriander in any form. What can I use instead?

Hey Valerie, parsley is in the same family as coriander, it has a slightly more bitter taste but will a similar freshness that the coriander does in this salad. Hope that helps!

Hi
Sounds delicious but I can’t eat peppers or chilli, I’m guessing you could swap them out for other veg such as cucumber and carrots or other similar veg?
