Upgrade your chips with the aromatic flavour of Za’atar, a Middle Eastern spice mix, with these delicious Za’atar Fries! This spice mix contains fresh thyme and oregano as well as a little known spice called ‘sumac’.
We think this is an underused spice, as it adds lots of flavour to pretty much anything, especially meat! It’s made from berries and has lemony and lime notes; in fact, some places in the Middle East use it as a table condiment for sprinkling!
We’ve added sumac to our spice mix to add depth and freshness: the best thing is, you can make up plenty of this spice mix in advance and keep it in the fridge! Try it on chicken, lamb or vegetables whenever you need seasoning in a pinch.
You can enjoy these Za’atar Fries as a side to so many dishes, including roasted meats, egg dishes or even as a tasty snack!

Preheat the oven to 200°C.

Place the fries on an oven tray, spray with low calorie cooking spray and sprinkle with a pinch of salt. Cook in the oven for 35-40 minutes, turning halfway, until golden brown.

While the fries are cooking, add the oregano, thyme, salt, pepper and sumac to a mixing bowl and mix well.
Step 4
When the fries are cooked, toss them in 1 tbsp of the spice mix and check the seasoning. Add more salt and pepper if needed, and serve.

You should cook these Za’atar Fries until the fries are crispy and golden brown. This should take 35-40 minutes.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

These fries should be enjoyed freshly cooked.
Can I freeze Za’atar Fries?
Fully cooked chips can lose their texture when frozen and nobody likes soggy fries! We don’t recommend freezing them so you should enjoy these fries freshly cooked, while they’re hot and crispy.

Instructions
