After what feels like the longest month EVER, it’s time to say goodbye to January! Let’s celebrate with a brand-new Weekly Pinch of Shopping!
To welcome in February, we’ve been out and about looking for new slimming-friendly supermarket finds to load into your trolley. This week, we can’t stop thinking about the Ready To Fill Potato Skins we spotted in Iceland. Super-quick to cook, (especially if you have an air fryer) the list of fillings to try is practically endless…
Plus, if you’re finding the Easter egg aisle at the supermarket hard to resist, we’ve found some Cadbury Mini Eggs Choc Cakes that you can enjoy with a cuppa – and they’re only 120 calories each!
Pinch of Nom: Express is out NOW! Thank you SO MUCH for all the love you’ve been showing our brand-new book. It made our year to see how many of you tried and loved the recipes…and we never get bored, so keep those photos coming!
If you’ve made any of the new dishes, we’d love you to share photos with us in our Gallery, on our Facebook group or over on instagram @pinchofnom.

You can join the group by clicking here. Make sure to let us know if you spot any yummy-looking, slimming-friendly new products on the supermarket shelves – we might just feature them in our next article!
Our Weekly Pinch of Shopping list aims to show you slimming-friendly products that you can find online or in one of your local supermarkets. We try to make it as easy as possible for you to pick up these items as part of your usual weekly shop, and we’ll always include the calorie information and the RRP for you.
Please remember that, although all prices are correct at the time of writing, supermarkets can change their prices often, so this should be used as a guide only.
Along with our favourite new finds from the supermarket shelves, each week we include details of the Aldi Super 6. Every fortnight Aldi discounts a selection of 6 fruits and veggies that you can pick up for a fraction of the price. This week we’ve given you a reminder of the current selection, so hurry down to Aldi to pick up some bargains before a fresh selection goes on offer next week!

On your busiest days, you can microwave them in as little as 3 minutes, although they’re suitable for cooking in the oven too. Flaky and full of protein, each salmon fillet works out at around 260 calories.
We’d serve them with plenty of green veggies, and a few Pesto Roast Potatoes. The zesty lemon pesto coating will complement the garlicky fish like a dream!

The creamy mint-flavoured ice cream is swirled with sticky-sweet chocolate sauce, so they taste far more indulgent than they really are. Plus, if the fresh minty flavour doesn’t catch your eye, there’s a salted caramel version too.
For anyone that’s crazy for mint chocolate, we included a Quick Prep dream dessert in our latest cookbook for you! Turn to page 216 of Pinch of Nom: Express to whip up these airy, light, 148-calorie Mint Chocolate Mousses (and thank us later!).
Wheyhey Protein Power Mint Choc Ice Cream Sticks are available from Iceland, priced at £3.50 for a pack of 3.
Kellogg’s Special K High Fibre Crunchy Golden Clusters Cereal – 177 calories per 45g
Sometimes you can’t beat the convenience of cereal for breakfast, although it’s not usually an option that fills your bowl with healthy goodness. Kellogg’s Special K has always been a good choice for anyone following a slimming plan or counting calories, and this new High Fibre Crunchy Golden Clusters Cereal is no exception.
Packed with wheat bran fibre to boost your gut health, the caramel-flavoured clusters are also fortified with vitamins and minerals. Serve with milk or yoghurt to start your day with a crunch!
Did you know it’s really easy to make granola at home? There are no nasty ingredients or heaps of sugar in the nutty oat granola that we’ve included in our Peanut Butter and Jelly Pots recipe. Layered up with strawberries and Greek yoghurt, these are perfect for an on-the-go brekkie.
Kellogg’s Special K High Fibre Crunchy Golden Clusters Cereal is available from Tesco, priced at £3.00 for a 360g pack.
Cadbury Mini Eggs Choc Cakes – 120 calories per cake
There’s no escaping the Easter egg aisle in the supermarket right now, even if the day itself is still a way off. If you’ve got chocolate on the brain, these Cadbury Mini Eggs Choc Cakes will give you a taste, without a hefty calorie count.
Pop the kettle on, put your feet up and nibble on chocolate sponge, topped with a vanilla cream, coated in milk chocolate and decorated with a Mini Egg, all for 120 calories.
When we need a chocolate fix, there’s one recipe that never lets us down. Our Chocolate Brownies are the best way to keep your inner chocoholic happy, and each squidgy square is only 59 calories – more reason to go back for a second helping if you ask us!
Cadbury Mini Eggs Choc Cakes are available from Iceland or Sainsbury’s, priced at £2.50 for a pack of 6.
Iceland Broad Beans – 49 calories per 80g serving
Next time you fancy a change from peas or broccoli, why not add a spoonful of these Iceland Broad Beans to your plate? Packed with fibre, broad beans are great at filling you up, for very few calories.
More versatile than you might think, you can roast, steam, stir-fry or sauté broad beans (and these frozen ones can even be popped in the microwave). The flavour is mild and creamy, so they’ll go with just about anything!
For more green goodness on your plate, don’t miss our brand-new recipe for Chilli Roasted Greens. Coated with a lively mix of ginger, lime and fiery chilli, we’ve taken broccoli, green beans, courgettes and asparagus up a notch, ready to serve with your favourite mains.
Iceland Broad Beans are available from Iceland, priced at £2.00 for a 700g bag.
Morrisons Mini Hash Brown Waffles – 104 calories per 2 hash browns
These Morrisons Mini Hash Brown Waffles are a mash-up of two of the best potato-based side dishes! At 104 calories for 2, we’ll be finding any excuse to add a couple to our plate – whether it’s breakfast, brunch, lunch or dinnertime.
Ready to cook from frozen, they’ll crisp up nicely in the oven or air fryer in less than 15 minutes.
Imagine how good they’d be served alongside our epic Breakfast Sliders. Piled high with cheese, tomatoes, mushrooms, bacon and sausage, you might think these are too indulgent to enjoy on a slimming-friendly diet, but we’ll let you in on a secret – they’re 280 calories each!
Morrisons Mini Hash Brown Waffles are available from Morrisons, priced at £1.49 for a 454g bag.
Quorn Cheese & Broccoli Escalopes – 230 calories per escalope
For a veggie-friendly midweek dinner, these Quorn Cheese and Broccoli Escalopes are handy to have in the freezer. Inside the golden breadcrumb coating, each escalope is hiding an oozy layer of cheese and broccoli, on top of a high-protein meat-free filling.
It’ll only take 20 minutes in the oven to get these piping hot on the inside, and lovely and crunchy on the outside. We’d dish them up with a side of our Air Fryer Rustic Potato Wedges, to get dinner on the table in under half an hour.
You only need a few spuds and a sprinkling of seasoning to make this easy recipe, and it works well in the oven too, if you don’t have an air fryer. We have a separate oven method right here.
Quorn Cheese & Broccoli Escalopes are available from Iceland, priced at £2.65 for a pack of 2.
Ryvita Crispy Snacks Salted Caramel – 63 calories per slice
New favourite snack alert! A chocolate-covered Ryvita might sound a bit strange, but don’t knock it till you’ve tried it. Bringing a satisfying crunch, along with taste bud tingling salted caramel flavours, these are (almost) better than a biscuit with your brew!
Great for taking out and about, the crispy snacks are bundled into packs of 2, so you can always have a healthy treat within reach. At 63 calories per slice, they’ll keep your sweet tooth happy, while slotting easily into your meal plan.
If you can’t say no to the sweet and savoury mix of salted caramel, you need to try our Salted Caramel Rice Krispie Bars from Pinch of Nom; Quick & Easy. The chewy, no-bake bars are easy to make, and only 115 calories each.
Ryvita Crispy Snacks Salted Caramel are available from Morrisons, priced at £2.25 for a box containing 3 packs of 2 crispy snacks.
Iceland Ready To Fill Potato Skins – 95 calories per 100g
Hands up if the crispy skin is your favourite bit of a jacket spud! We’ve spotted these Iceland Ready To Fill Potato Skins and they’re a game changer for easy lunches and dinners.
Rather than waiting hours for your potatoes to roast, these will be golden brown after 20 minutes in the oven (or 13 minutes in an air fryer!). The potato in the centre has been scooped out, leaving plenty of room for your choice of toppings. Beans, tuna mayo, leftover Chilli Con Carne – anything goes!
Why not take inspiration from our Chilli Stuffed Sweet Potato ? Once your spuds are loaded with filling, top them with cheese and pop them under the grill for 5 minutes, until it’s all gooey and glorious!
Iceland Ready To Fill Potato Skins are available from Iceland, priced at £2.00 for 400g.
