You can easily get 8 good size muffins from this recipe and I don’t do tiny portions.

If you are unfamiliar with cooking with coconut flour you should know that it’s very fibrous and absorbent so your liquid soaks up very quickly.

The eggs we used for these 1 Syn Raspberry and White Chocolate Muffins were very large eggs, so you may need to add a little more.

If you feel your mixture is still very stiff before adding your whites then add a little more water or alternatively use an extra egg.

These 1 Syn Raspberry and White Chocolate Muffins only work out at 1 syn if you are using the Quaker Super Goodness Super Fruits as your HEB. If you’re not using your HEB they work out at 2 syns each.

Coconut Flour

Coconut flour is great to use as a substitute for normal flour. Since Coconut Flouris rich in fibre, it absorbs more liquid than most other flours.

This means, you can reduce the amount of coconut flour (and also the syn value) when you swap with regular wheat flour. We use Sukrin Coconut Flour which you can buy here on Amazon.

It’s important to note that not all coconut flours are the same. Different brands can vary in density and they can have slightly different absorption abilities. They can even have different syn values.

We only use Sukrin Coconut Flour, as we know it is 3.5 syns per 25g, and we know how much to use to create a recipe successfully.

You can use other brands but please remember to check the syn values and make any necessary adjustments to quantities.

You will generally substitute 1/4 cup to 1/3 cup of coconut flour for every cup of regular grain-based flour depending on the recipe. It’s becoming a popular substitute flour of many people on restricted diets. It’s not only gluten free but also high in fibre, low in carbohydrates, and, more importantly for those on the Slimming World journey, it actually has a lower syn value than regular flour.

Self raising and plain flour are usually 4.5 syns per 25g. Coconut flour is a whole syn less for the same amount. You’ll also be using considerably less coconut flour, so it will reduce the syn value even further!

What is Sukrin 1?

We use Sukrin 1 which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over onAmazon UK.

Sukrin 1 doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these 1 Syn Raspberry and White Chocolate Muffins.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

INGREDIENTS

INSTRUCTIONS
  1. Sift your coconut flour and baking powder in a bowl
  2. Mix in your Quaker super fruits sachet and then add your vanilla essence, sweetener and egg yolks
  3. Mix in your water being sure to mix well
  4. Whisk your whites until stiff
  5. Add a spoonful at a time and mix well until you have a workable consistency, then gently fold in the remaining whites
  6. Gently fold in your raspberries and spoon the mix between into your muffin cases
  7. Bake in a preheated oven at 180°C for 25 minutes
  8. Once out the oven add one small white chocolate button on top and place a fresh raspberry on once the button starts to melt
  9. Dust with icing sugar and enjoy

    1. i hav’nt made any of the cakes yet although i intend to lol but it says although ordinary flour is only 1 syn more you actually use a lot less coconut flour so the syns become even less xx

  4. Hi, I’ve made these cakes today and they are lovely:) only one problem. A lot of the cake is sticking to the cake case, don’t want to lose any ! Lol! Could the mixture be too wet?

  6. To anyone just picking this link up the quaker oats are available in sainsburys and ocado (prob in other super markets too) bit the super fruits are only blueberry and guava! I’m assuming you can use the original instead. You can also get the coconut flour from sainsburys 🙂
