Not sure about butter beans? We added butter beans to this recipe because we’re big fans of this tasty bean, however, you could use other bean varieties like cannellini or borlotti.
We like to use good quality chopped tomatoes in this recipe, as we find cheaper tins can be a little watery. Of course you could always use a few chopped fresh tomatoes if you prefer, or cheaper tins with a little tomato puree added to give them more flavour.

Add the eggs to a bowl and season to taste with salt and pepper, then whisk with a fork.

Add the fried vegetables, butter beans, and tomatoes. Then stir.

Spray the pan with a little more low-calorie cooking spray and set on a medium heat.

Add the egg and vegetables mixture and cook on a medium heat for 5 minutes — until the eggs have almost set, and the bottom is lightly browned.
Step 7
Sprinkle the spring onion and grated cheese evenly over the top, then put under a pre-heated grill for 3-5 minutes — until the frittata is set on top but still moist in the middle. Then cut into four and serve.

Cooked eggs don’t always freeze particularly well so you’re probably best to cook this fresh. It would keep well in a fridge to be reheated, for a couple of days ????
