In anticipation of Pancake Day we asked our Facebook group for their favourite flavours, and Bacon, Maple and Blueberry was one of the most popular ones.

So, we thought we’d give it a go…..and we’re glad we did! These Low Syn Bacon, Maple and Blueberry Pancakes have become a firm favourite of ours.

How do we make these Low Syn Bacon, Maple and Blueberry Pancakes low syn?

Usually, you’d make pancakes with some oil, but oil + Slimming World = Syns. This is where Sunflower Frylight comes in!

Whenever we need to replace oil in cooking we use Frylight, and Sunflower Frylight is just perfect for Pancake day.

These Low Syn Bacon, Maple and Blueberry Pancakes are only so low in Syns if you use a proportion of your Healthy Extra A & Healthy Extra B. If you don’t then you will have to Syn them accordingly.

Surprising as it may seem, maple syrup is only half a syn per teaspoon, and the blueberries are a speed food, so that’s an added bonus!

Do I need to Syn the sweetener in these Low Syn Bacon, Maple and Blueberry Pancakes?

As you will probably know Slimming World recently brought out some new recommendations regarding the syn value of granulated sweeteners.

Where there is 1 tbsp or more being used per serving Slimming World recommends that members count 0.5 Syn per tbsp.

If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Low Syn Bacon, Maple and Blueberry Pancakes uses 1/2 a tablespoon of sweetener. That’s half a tablespoon per portion, so there’s no need to add any Syns on for the sweetener itself.

If you don’t want to use your Healthy Extra A or Healthy Extra B then they will be 10 Syns for the lot.

INGREDIENTS

INSTRUCTIONS
  1. Cook the bacon medallions. You can grill, fry or cook in the oven depending on you preference. But make sure it's crispy
  2. While the bacon is cooking mix the blitzed oats, milk, vanilla, eggs and Sukrin together well
  3. Spray a frying pan with some Sunflower Frylight and allow to heat
  4. Pour in small amounts of the mix to make 2 pancakes. Allow to cook through until brown underneath, then turn and cook for a few more minutes.
  5. Repeat until all the mix is used (you should get 4 pancakes from the mix)
  6. Place one pancake on a plate, then arrange a piece of bacon slightly overlapping. Continue with the rest of the pancakes and bacon
  7. Arrange the blueberries on top of the pancakes, drizzle with the maple syrup and serve

    1. Hi Katy
      We have a number of recipes on the site that use blitzed oats, and when we posted the first one we contacted Slimming World directly to check this with them.
      They confirmed that you do not have to syn oats if you blitz them to use them in this way. There are 2 reasons for this. Firstly, putting the oats in a food processor does not alter the nutritional value. Secondly, as you are using them as you’re HEB the amount you can eat is restricted so there’s very little chance of you over eating them. If you do have more than the HEB allowance (or choose not to use it as your HEB) you would have to syn it anyway.
      We always make sure that we supply the correct information regarding syns and tweaks.

      When we first started making recipes with blitzed oats we knew there would be some debate about whether it should be synned or not, so we thought we’d get the info straight from the horses mouth so to speak, and contact SW directly to avoid any confusion.

    1. Hi Liz
      If you just use our basic oat pancake recipe and count the oats as your HEb, then the pancakes will be free. It’s the addition of the extras, such as chocolate, cooked banana, maple syrup etc that adds the syns. Enjoy!

      You can use any basic porridge oats for these. 40g of oats is your HEB allowance.
      Now you can also use Ready Brek, as it’s recently been added to the HEB list. 🙂

      The blurb has now been edited to confirm that blueberries are indeed a speed food. They were added to the list of speed foods in January 2018. 🙂
