These deliciously moreish Plum Custard Tarts are slimming friendly and perfect if you’re counting calories or following a plan like Weight Watchers.
We love Christmassy spices and the mixed spice in these tarts gives them a really festive feel! If you’re not keen on plums, then you can also use any other kind of stone fruit – for example, nectarines also work really well.
We think that these Plum Custard Tarts are best served warm for pudding, but they’re also great served cold as a snack with a hot drink at any time of day.

Preheat the oven to 160°C.

Cut the filo pastry into 16 squares. In a mini muffin tin, spray 8 of the cups with low calorie cooking spray and push 8 of the filo squares in. Spray again with low calorie cooking spray and put the remaining 8 squares on top. Cook for 5 minutes.
Step 3
Meanwhile, chop the plum and place in a saucepan with 1 tablespoon of the Sukrin Gold, the mixed spice and 2 tablespoons of water. Cook gently for 5 minutes until the plum has softened.
Step 4
Beat the egg in a jug and add the remaining 1 tablespoon of granulated sweetener and the vanilla extract.
Step 5
Into the filo cases place some of the plums and top with the egg mixture. Bake in the oven for 12 minutes until the egg is set.
