Our Spicy Potatoes are packed full of herbs and spices to remind you of the sunshine and they’re totally adaptable to taste too. When the potatoes go in the microwave do you cover them in water? I made these today and they were too hard and spicy.
SharonFriday 26th August 2022
Hi Amy, sorry to hear you found our Mexican potatoes too hard and spicy. The potatoes need to be cut into even 2 cm cubes to cook in the time stated in the recipe. You don’t need to add water when you microwave them. After microwaving, cook them in the oven for around a further 17 minutes or until soft inside and crisp and golden on the outside. This is a spicy dish, but you can reduce the amount of chilli powder to suit your own taste. Hope this helps.

Hi! probably a stupid question, but do you peel the potatoes before cutting them into cubes or do you leave the skin on?
LisaSunday 24th January 2021
Hi, Rosemary
I prefer to leave the skins on. It’s less work and I find it tastier, but you can peel them if you want. It’s personal preference really 🙂
AnnieSunday 10th January 2021
I haven’t got a microwave. How would I make these without that step?
HollySunday 10th January 2021
Hi Annie, Chop the potatoes into 2cm cubes and place into a pan of boiling water and cook for a few minutes until just soft then continue with the rest of the recipe. Hope that help!

Do you freeze these after you’ve cooked them? Or freeze them before putting in the oven, ie when been part boiled in microwave and spices added?
Holly LevellWednesday 13th May 2020
Hi Catherine, It is best to freeze these when cooked but allow them to cool down completely. Don’t forget to add a label with what it is, and on what date you put it in the freezer!
