They are also so ridiculously easy to make too, with just two ingredients you really cannot go wrong! They’re almost a bit too easy to warrant a recipe, but a few members of our Facebook Group demanded it, and we’re more than happy to oblige, so here we are!

These Pigs in Blankets are low in Points and calories etc and very, very tasty. The Heck Chicken Italia sausages are the perfect match with the bacon. Subtle garlic and herby notes, certainly keep them interesting.

You could of course use any sausages, but just check the nutritional values of whatever you use as they do vary.

What Sausages are the best for these Pigs in Blankets?

Use any sausage you prefer, just make sure you check the points and calories, because they can vary depending on brand.

I can see myself making a batch of these and putting them in the fridge to munch on in the day! You can, of course, make them a couple of days before, and just leave them in the fridge.

You could put them in a small foil takeaway tray and cook them in it too – save on washing up! Seriously, the fewer dishes to wash on Christmas Day the better!

We buy ours in bulk from Amazon, but you can also get them from any of the major supermarkets. Well worth having in the cupboard in my opinion.

INGREDIENTS

INSTRUCTIONS
  1. Pre heat the oven to 190°C
  2. Cut each sausage in half, then cut the bacon medallions in half lengthways
  3. Wrap each piece of sausage in the bacon pieces and place them on a baking tray seam side down
  4. Cook at 190°C for 25 minutes or until they are cooked through and the bacon has started to crisp a little

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.
