These Strawberry Oat Muffins were suggested in our Facebook group and are really great for a sweet snack – or even breakfast! The added strawberry essence makes these golden bakes really fruity, and they work especially well when paired with a scoop of strawberry yoghurt and some freshly chopped strawberries – you can never have too many berries! If you do want to tone down the berry flavours, then creme fraiche would also make a great accompaniment.
If you make up a large batch of these muffins then you can just keep them in an airtight container for an easy grab and go snack. They’ll last you a good few days!

We’ve used Sukrin Gold in this recipe as it doesn’t have that strange aftertaste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these Strawberry Oat Muffins.
You can pick this up over on Amazon.
If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How much is considered a serving? 1 muffin or 2 etc
I think putting a serving size or amount would be really helpful
HollyTuesday 5th April 2022
Hey Charlotte, this recipe makes 6 muffins and serves 6 so the nutritional information is for a single serving, hope that helps!

Hi,
Just wondering do you need to add the strawberry essence or will the recipe be alright without it?.
Many thanks.
Aimee.
HollyMonday 7th February 2022
Hi Aimee, you can make the recipe without the strawberry essence or you could swap it for vanilla essence instead. Hope that helps!

Hi,
If we were to buy the Sukrin Gold that was linked above, how long would this last? As it is quite expensive and on quite a tight budget
Thanks
Vikki
KateMonday 16th January 2017
Hi Vikki,
It’s the same weight, consistency and sweetness of normal sugar, which means you would use it the exact same way, so it will last for the same period of time as sugar
