A few of weeks ago we started a Facebook Group for those people who wanted to talk to us about not only our recipes, but Slimming World friendly food in general. As chefs we’re really lucky that we are in a position to help people from a culinary point of view.

We’re also loving the recipes that others are sharing with us on the group, like these fabulous summer strawberry oat muffins!

This recipe makes 6 delicious Strawberry Oat Muffins using 80g of Oats. You can have 3 for your daily HEB and save 3 for the next day!

They are Syn Free, unless you want to count the 1 cooked strawberry on the top (we don’t, but they are 1.5 syns for 100g of cooked strawberries if you do). If you don’t want to use your HEB they will be 2 syns each.

We use Sukrin Gold which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin Gold over onAmazon UK.

Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like this Syn Free Summer Strawberry Oat Muffins.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

Synning the sweetener for these Syn Free Summer Strawberry Oat Muffins

As you will probably know Slimming World  brought out some new recommendations regarding the syn value of granulated sweeteners last year. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Syn Free Summer Strawberry Oat Muffins uses 1.5 tablespoons of sweetener and is divided into 2 portions. That’s less than a tablespoon per portion, so there’s no need to add any syns on for the sweetener itself.

  1. Preheat oven 180°C
  2. Spray muffin tray (silicon works best) with Frylight
  3. Mix together oats, eggs and yogurt
  4. Add sweetener and strawberry essence and mix well
  5. Wash, dry and remove stalks from strawberries
  6. Spoon mixture into your muffin tray
  7. Gently push  a strawberry into each muffin
  8. Pop into the oven and bake for 30-35 minutes
  9. Enjoy!

    These look great but they are not Syn free the would be st least 6syns for the batch of 6 if using 35g oats as your HexB also cooked strawbs should be Synned too.

      All the info about using your HEB, and syn value if your not using your HEB, is mentioned in the write up before the recipe.

      Sukrin Gold is an all-natural brown sugar substitute with less than 1 kcal per teaspoon, making it syn free. It doesn’t have that nasty artificial taste that other sweeteners do making it perfect for baking and desserts. You can buy it here on Amazon

    If we were to buy the Sukrin Gold that was linked above, how long would this last? As it is quite expensive and on quite a tight budget

      It’s the same weight, consistency and sweetness of normal sugar, which means you would use it the exact same way, so it will last for the same period of time as sugar

      You can blitz the oats if you choose to. It’s not a tweak because it’s a measured amount of oats, so impossible to overeat. 🙂

  3. I found your recipe today as my husband needs to lose weight to get a hip operation and he asked me to find a recipe for oat muffins. I made these this evening and he absolutely loved them. Thank you so much x

      Never tried freezing these, the strawberry itself may well go too mushy and spoil the texture. (If you’ve ever had defrosted strawberries, you’ll understand what I mean.:-)) Hope that makes sense.

  4. Hey, I made these, blended the oats and when i took them out of the oven the strawberries sunk right down and left a huge gap at the top! They look nothing like your picture, please help!

    1. Hi Wensdae
      Make sure the oven is preheated and up to temperature before you pop the mixture in to cook. Try cutting slightly smaller pieces of strawberry, too. Try to avoid opening the oven until at least 2/3 of the way through cooking time.
      You could also try whisking the egg whites separately and folding them into the mixture to introduce as much air as possible. Hope that helps. 🙂
