This super simple slimming-friendly Caprese Pasta uses just a few delicious ingredients to turn a classic Mediterranean flavour combo into a fresh and filling dinner.

This recipe will take you to Italy and back, even if it is raining at home!

These fresh flavours combined with authentic pappardelle pasta is a real winner, and if you’re feeling really good you could swap out the pasta for some steamed vegetables. However you serve yours, our Caprese Pasta is a great option if you’re counting calories or following Weight Watchers.

How many calories are in this Caprese Pasta?

There are 475 calories per portion in this Caprese Pasta, which means it falls into our Weekly Indulgence category.

This Caprese Pasta is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Set oven to 200 degrees, coat the tomatoes in low calorie cooking spray, salt and pepper and roast for around 30 minutes. Keep an eye on them so they don’t burn. Boil the pasta according to the packet instructions in salted water.

Step 2

Meanwhile chop the onions, chilli and garlic very finely and place in a frying pan. Fry on a moderate heat in low calorie cooking spray.

Step 3

Once the onions have turned a golden colour, take off the heat.

Step 4

Add the cooked pasta and roasted tomatoes to the onion mixture, adding the fresh basil also. Lightly mix until the ingredients are combined.

Step 5

Plate up, and add the mozzarella on top by tearing it into little pieces. Season and tuck in!

How do you know when this Caprese Pasta is cooked?

Cook the pasta according to the instructions on the packet usually dried pasta is cooked between 10-12 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Caprese Pasta in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Caprese Pasta in the fridge for approximately 3 days or so.

  • 150 G Pappardelle Pasta
  • 250 G Cherry Tomatoes
  • 2 Small Red Onions
  • 1 Clove Garlic
  • 1 Green Chillies Depending on spice level, you may want less
  • 1 handful Fresh Basil
  • 140 G Reduced Fat Mozzarella
  • Low Calorie Cooking Spray
