There are a lot of variations of “Diet Coke Chicken” on the interwebs, some of which are a little peculiar. Most of them use… surprise, surprise Diet Coke!

I prefer to use Pepsi Max as I think it thickens better than Diet Coke. You could even use the Pepsi Max Ginger, and there’s more info about that below.

The chicken breasts are lovely, plump and don’t have that horrid vac-pack smell when you open them up!

If you don’t fancy using chicken you could always use some diced pork, and if you don’t eat meat, just make it into a vegetarian version! You could use some Quorn Chicken pieces or even just lots of speed food.

How do I make this Syn Free Diet Coke – Pepsi Max Chicken?

Step 1

Spray a frying pan with Frylight and heat gently. We used Avocado Frylight as in our opinion it’s the best one.

Step 2

Add the chicken, sprinkle with the 5 Spice and season. Stir and cook until the chicken has started to brown.

Step 3

Remove the chicken from the pan, add a few more sprays of Frylight then fry off the onions, ginger, garlic and mushrooms.

Step 4

Cook until they start to soften.

Step 5

Add peppers, baby corn, tomato puree, soy sauce, Worcestershire sauce, vinegar and Coke/Pepsi. Stir and bring to the boil.

Step 6

Stir in the half a stock cube and the stock pot and simmer, uncovered, for 10 minutes.

Step 7

When the sauce has started to thicken and go a bit syrupy, return the chicken to the pan and stir in the spring onions.

Step 8

Simmer for another 10 minutes. Check the consistency and if it’s not quite thick enough simmer for a bit longer, until the required consistency is reached.

Can I freeze this Syn Free Diet Coke – Pepsi Max Chicken?

Yes you can! Just make sure you freeze it as soon as it’s cooled, and it’s piping hot all the way through after reheating.

INSTRUCTIONS
  1. Spray a frying pan with Frylight and heat gently

  8. Simmer for another 10 minutes. Check the consistency and if it's not quite thick enough simmer for a bit longer, until the required consistency is reached

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough

- Use a container or bag that is suitable for freezing.

- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)

  1. I can’t have Worcester sauce and usually replace this with either balsamic vinegar or soy sauce in recipes. As you already use these is there an alternative or would you just increase one or both of the others? Thanks

    1. You can increase which ever you like. Have you heard of Henderson’s Relish? It’s a veggie version of Worcestershire Sauce and it’s amazing imo

  3. I have just made this recipe for this evening’s meal…we are huge fans of garlic and ginger in this house so to have it in the recipe was a winner to begin with. It was absolutely gorgeous, both the flavours of the garlic and ginger came through, as did the hint of 5 spice powder. I didn’t reduce mine right down though as I enjoy having some stock to mix in with any rice I am using…..It would be equally as good with Syn Free wedges/chips or as a topping for a jacket potato.       The sauce may need reducing to thicken if cooking this in a slow cooker. It’s quite a quick recipe when made on the stove, less than 30 minutes, so it might be better to stick with the method in the recipe 😊

      This is one that really does need to be made on the hob. The liquid has to be reduced right down on a fast simmer to create the thick and sticky sauce, which you can’t do in the Instant Pot.

  6. Made this late night and it was amazing. Hubby doesn’t like baby corn, so replaced it with carrot. Loved the flavours, tasted like Chinese takeaway. Will definitely make again.
