This is a classic summertime or BBQ side dish. However, the traditional potato salad isn’t very Slimming World friendly with all that mayonnaise, so we decided to make our own Syn Free Potato Salad.

It’s a perfect for any BBQ or picnic, or just as an accompaniment to a salad.
This Syn Free Potato Salad will keep for a couple of days in the fridge, so you can make a batch up and take it to work during the week if you want.
How do I make this Syn Free Potato Salad?
This Syn Free Potato Salad is so easy to make. You could even use some leftover cooked potato if you’ve got any to use up.
First, cook the potatoes in boiling salted water. While they’re cooking finely chop the spring onion and chives.
In a large bowl, mix together the quark, yogurt, chopped chives and spring onions (reserving some for garnishing).
Season with some sea salt and freshly ground black pepper, then set aside in the fridge.
When the potatoes are cooked, remove from the pan and allow to cool enough to handle – you can run them under cold water to speed this up a bit. Cut the potatoes in half or quarters, depending on size, then mix them in with the quark mixture.
Mix well & set the Syn Free Potato Salad aside in the fridge until you’re ready to serve.
