We posted our Bacon, Bean and Egg Bakes a few weeks ago. They proved to be quite popular and people started asking what else they could add so we thought we’d post this Syn Free Sausage, Mushroom and Tomato Breakfast Bake as an alternative.

This is syn free if you use Slimming World syn free sausages, and the 10g of cheese per serving as 1/4 of your HEA (otherwise it’s 1.5 syns per portion).

You can of course use whatever sausages you like, but don’t forget to Syn them accordingly

As with the Bacon, Bean and Egg Bakes this Syn Free Sausage, Mushroom and Tomato Breakfast Bake are really quick and easy to make, and you can even prepare them the night before (minus the egg of course) and leave them in the fridge so all you have to do is crack the egg on top and pop them in the oven or microwave them in the morning.

Don’t forget, cooking times will vary depending on your microwave or oven, the size of dish you use and how you like your eggs, so we’ve given you a rough guide for both. I like a runny yolk so 15 minutes in the oven was perfect for me.

  1. If using the oven preheat to 190°C - 200 °C
  2. Cook the sausages, or you can pre cook them in advance
  3. Lightly spray 2 large ramekins or individual pie dishes with Frylight
  4. Heat a frying pan over a medium heat, spray with Frylight, then add the onion and mushrooms. Gently fry until they start to colour
  5. Divide the sliced sausage, onion and mushrooms evenly between the two dishes.
  6. Spoon the chopped tomatoes over the onions and mushrooms
  7. Season with a little sea salt and freshly ground black pepper, then top with the grated cheese
  8. Crack an egg on the top of each one, spray with a little Frylight and sprinkle with a bit more salt and pepper
  9. Either bake in the preheated oven for 15 - 20 minutes or microwave on high for at least 60 - 90 seconds (don't forget to cover with cling film in the micro wave). Make sure the egg is cooked as you like it and serve

  1. Can this recipe be frozen? I am adding diced and pre-cooked potato cubes to mine and swapping tinned tomatoes for passata. Would that make a difference?

      We haven’t given this recipe a freezer symbol, as the cooked egg doesn’t freeze/reheat too well. I’m sure you could try, but it’ll taste better when freshly made. 🙂
