People usually think working from home is a breeze, and you can do anything you like when you like.

Couldn’t be further from the truth in this house! Usually have calls in the afternoon, or busy working on some projects – and don’t have much time at all to cook. Which really sucks!

We often get asked which Spiralizer we’d recommend – this Cuisine Spiralizer is perfect, as you can Spiral into the container rather than the worktop! Most out there have no capacity to catch the spirals, which in my opinion isn’t the most hygienic! Spiralize ahead of time to save even more time, usually in the morning, and place them in tubs in the fridge. Makes it far quicker than boiling up a pan of pasta!

The sauce for this is simplicity at it’s finest, and if you’re not keen on how spicy/zesty we make it – you can adjust it!

Top with your favourite protein, for us it’s either Salmon or Crayfish – but you can use what ever you like.

  1. Spiralize your vegetables and set aside
  2. Put the chicken stock in a pan, and bring up to the boil
  3. Whilst waiting for the stock to boil, in a large bowl place the drained tomatoes, coriander, lime juice, Balsamic Vinegar, salt, pepper and chilli flakes. Once the stock comes to a rolling boil, take out 150ml (about a ladle full) and mix it with the tomatoes
  4. Place your spiralized vegetables into the chicken stock - cook for 2 minutes or so. Keep and eye on them - no one likes over cooked veg!
  5. Once cooked, mix with the other ingredients. Serve with Salad and top with what ever meat or fish you like! Top with Spring Onions.
