These sticky, chocolately treats would usually be considered off-limits if you’re watching your calories, but we’ve used substitutions to make a lower calorie version which is just as delicious.
Usually, the caramel layer is made with calorie-packed sweetened condensed milk, sugar and butter, but here we’ve used sugar-free creamy toffees instead.
The caramel, crisp shortbread and chocolate drizzle makes this a special treat that you can enjoy without regret!
What diets is this Millionaire’s Shortbread suitable for?
This Millionaire’s Shortbread recipe is suitable for vegetarians. It can be made gluten free as long as you substitute the plain flour for a gluten free version.
Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.
Do you need any special ingredients to make Millionaire’s Shortbread?
You will need some sugar-free creamy toffees which can be found online or in your usual supermarket. You will also need a light double cream alternative such as Elmlea Double Light Cream Alternative. This contains 50% less fat than double cream and can be found in most supermarkets.

You will need an 18cm x 18cm square cake tin like this one to make this recipe.
How many calories are in this Millionaire’s Shortbread?

This Millionaire’s Shortbread is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

Step 1
Preheat the oven to 160ºC and grease the cake tin with a little butter, then line the base and sides with non-stick baking paper.
Step 2
Put the butter, sugar and sweetener in a medium bowl and beat with an electric hand whisk or wooden spoon until light and fluffy. Add the flour and stir until combined. Squeeze the mixture together with clean hands to make a smooth ball – you may need damp hands to help bring the dough together (avoid over-handling as this may make the dough tough).
Step 3
Place the dough in the base of the tin and use your knuckles and fingertips to gently press it into a thin, even layer that covers the base. Prick it all over with a fork and bake for 20-25 minutes until light golden. Remove from the oven and leave in the tin to cool completely.
Step 4
For the caramel, put the toffees in a small saucepan over a very low heat and stir for about 2 minutes until just melted. Remove from the heat and stir until completely melted. Stir in the cream alternative. Quickly pour the caramel over the shortbread and spread it out evenly with the back of a spoon. Leave to set for about 20 minutes or until firm.
Step 5
Use the baking paper to transfer the caramel shortbread from the tin to a surface. Melt the chocolate in a small heatproof bowl over a small pan of simmering water, stirring until melted, then drizzle it over the caramel and leave to set. Use a large, sharp knife to cut the shortbread into twenty pieces, remove from the paper and serve.

How do you know when Millionaire’s Shortbread is cooked?
You’ll need to cook this Millionaire’s Shortbread for around 25 minutes or until the biscuit layer is lightly golden. The toffee layer should be added when the biscuit is cool and left to set for at least 20 minutes until firm.
Here in the UK, the standard advice is to cook food until it has reached 70°C and maintained that temperature for 2 minutes. This is to keep you and your family safe!

Yes you can! This recipe can be frozen, but please remember to do the following;

- Place a sheet of non-stick baking paper between each square of Millionaire’s Shortbread to make them easier to defrost.
- Label your dish with the name of the recipe and the date that you froze it on.

Hi Hayley, you need to use a granulated sweetener that is crunchy. Canderel makes a range of sweeteners; the granulated crunchy ones are Canderel Sugarly and Canderel Stevia Blend Crunch. There are other similar brands available. We developed this recipe using a granulated sweetener made by NKD Living, 100 % Natural Erythritol Natural Sugar Alternative, which is available from Amazon. If you’re not concerned about calories, you can replace the granulated sweetener in the ingredients list with caster sugar instead. This would mean you would need to use a total of 50g of caster sugar. Hope this helps and you enjoy the recipe!
