There’s no need to miss out on pie when you’re on a slimming journey! This Steak and Stilton Pie is great if you’re counting calories or following a diet plan like Weight Watchers. 

We’ve kept this recipe nice and light by using crispy filo pastry rather than buttery shortcrust. This cuts down on the calories without losing any of the flavour, and keeps this recipe hearty and filling. 

Inside, the pairing of tender, melt in the mouth steak and deliciously tangy Stilton makes for a dreamy flavour combination! Simmered on the hob until the beef is velvety and soft, this recipe takes a little bit of time, but it’s well worth the effort. 

We love to serve this Steak and Stilton Pie instead of a traditional Sunday roast, with a good dollop of mash and plenty of veg – it’s SO good! 

The rich steak filling can also be cooked in the slow cooker so you can leave it simmering low and slow all day and finish off the pie in the oven when you get home. Find the slow cooker recipe here

Do you need any special ingredients to make Steak and Stilton Pie?

You will need a red wine stock pot to make this recipe. These can be found alongside the stock cubes in most supermarkets. Using a red wine stock pot rather than red wine helps to keep this recipe slimming friendly. 

If you prefer, you can substitute the stock pot for 100ml of red wine (just remember to reduce the amount of water used in your beef stock by 100ml so there is not too much liquid in your filling). 

If you can’t get hold of a red wine stock pot you can also substitute this for a beef stock cube with a splash of red wine vinegar.

How many calories are in this Steak and Stilton Pie?

Step 1

Spray a heavy, medium saucepan with low calorie cooking spray and place over a medium-high heat.

Step 2

Coat the steak in the flour and add to the hot pan. Cook for 3-4 minutes until browned on all sides. Remove from the pan.

Deglaze the pan with a little stock, scraping up and mixing in any bits off the bottom of the pan and then spray again with low calorie cooking spray. Add the onions, carrots and celery and sauté for 5 minutes, until beginning to soften.

Step 4

Add the steak back to the pan along with the garlic and thyme, pour in the remaining stock, the Henderson’s relish and red wine stock pot, stir and bring to the boil.

Reduce the heat to low, cover and allow to simmer for 2 hours.

Step 6

After 2 hours, remove the lid and stir in the mushrooms. Carry on cooking, uncovered, for another 30 minutes or until the steak is soft and falls apart.

Add the crumbled Stilton and stir until melted. Season with some black pepper.

Pour into the ovenproof dish, and preheat the oven to 180°C.

Step 9

Cut the filo sheets into strips, scrunch up and place on top of the pie, covering the filling completely. Use a pastry brush to egg wash the top.

Step 10

Place on a baking tray to catch any spills in case the filling bubbles over and pop in the oven for 15 minutes, or until the pastry is golden and crisp. Serve!

How do you know when Steak and Stilton Pie is cooked?

You should cook the steak filling until the meat is tender and falls apart. Once you have added the filo pastry topping you’ll need to cook the pie in the oven until the pastry has turned crisp and golden brown. This should take around 15 minutes. 

To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and maintained that temperature for 2 minutes.

Once you’ve served this recipe, we’d recommend you eat it within 4 hours. 

You can store any leftover Steak and Stilton Pie in the fridge for around 3 days. Make sure that you allow your leftovers to cool before putting them in a container with a lid and storing in the fridge. 

Can I freeze Steak and Stilton Pie?

This recipe CAN be frozen, but we would recommend just freezing the filling and then adding the filo when you’re ready to cook it.

How do I reheat Steak and Stilton Pie?

From chilled: Place in an ovenproof dish, loosely cover the top with foil and place into a preheated oven (180°C) for 10 minutes, or until piping hot throughout.

From frozen: Allow the filling to defrost overnight in the fridge and then add the pastry topping and bake in the oven following recipe steps 8-10.

Ingredients

  • 400 g lean, diced stewing steak, all visible fat removed
  • 1 medium onion, peeled and sliced
  • 2 medium carrots, peeled and sliced
  • 1 stick of celery, sliced
  • 150 g button mushrooms (or larger ones, thickly sliced)
  • 1 clove of garlic, peeled and crushed
  • ½ tsp dried thyme
  • 1 tbsp Henderson's relish (or Worcestershire sauce)
  • 1 tbsp plain flour
  • 1 beef stock cube, made up with 600ml boiling water
  • 1 red wine stock pot
  • 75 g Stilton cheese, crumb
  • black pepper
  • 1 medium egg, beaten
  • 2 x 40g ready rolled sheets of filo pastry
  • low calorie cooking spray

    Hi Amy, Stilton has a tangy flavour so you could try replacing it with other cheese with a similar flavour. Blue cheeses such as Gorgonzola would work well, but if you’re not keen on any blue cheese you could try feta which has a tangy flavour. It won’t melt but will soften in the pie. Alternatively, you could just leave it out and the filling will still be delicious!
