Our Favourite Egg Recipes - Pinch of Nom Slimming Recipes

Fried, scrambled, boiled or poached, eggs are among the most versatile ingredients out there. While there might be much debate over whether they’re better hard-boiled or dippy (definitely dippy!), there’s no arguing with the fact that this budget-friendly ingredient is an egg-cellent source of protein – and puns! 

With our list of egg recipe favourites, you’ll never be short of slimming-friendly ways to have eggs for breakfast, lunch, dinner and dessert…

Eggs for Breakfast

How do you like your eggs in the morning? ‘Boiled’ or ‘fried’ won’t leave you satisfied after you’ve tried the harissa flavours in our Turkish-Style Eggs recipe. The traditional dish we were inspired by, ‘Cilbir’, uses chilli-infused melted butter for its signature kick. As delicious as it sounds, it’s not quite slimming friendly – so we mixed things up a bit by using a harissa paste. Even if you don’t like spice, this dish cools itself down with a garlic yoghurt drizzle. We love that moment when the rich egg yolk bursts out…We’re not drooling, you are!

Another delicious breakfast inspired by the Mediterranean, our Spanish Eggs recipe is well worth jumping out of bed for. More of a brunch option than a light brekkie, we’ve used Spanish-inspired chorizo flavours to make sure this dish tastes good enough for dipping (with a crusty wholemeal baguette or bread roll, if you fancy!). 

We’ve used Quorn sausages to lower the calories in this one. If you’re looking to ramp up the indulgence, you can always use meat sausages – just be sure to adjust the nutritional values, if you’re counting!

Just as good hot or cold, our eggy Breakfast Muffins are a filling fridge-friendly bite you can keep going back to. Enjoy them first thing, take them on-the-go for lunch or snack on them when you’re feeling peckish. 

We’ve used bacon, grated courgette, mushrooms, red onion and spinach for our batch, but you can make them your own by swapping in any leftovers you fancy – why not try sweet peppers or some melty cheese? Yum!

Eggs for Lunch

Whether you need a lunch that can leave the house with you, or something quick and tasty to enjoy on the spot, eggs are a reliable go-to. Traditionally, kedgeree is a breakfast dish, but we prefer to enjoy our Salmon Kedgeree as an eggi-licious midday option. With fragrant rice, veggies and flaky salmon pieces topped with boiled egg quarters, there’s plenty going on to excite your taste buds. If you’re storing leftovers for another day, you’ll want to reboil a fresh egg!

Yet another tupperware-friendly recipe, we’d love to have these crispy-coated Katsu Chicken Scotch Eggs waiting for us at lunchtime! Snack on them when you’ve got a hankering, or plate them up with a crispy, fresh salad for a more filling Katsu-flavoured treat. For only 259 calories per scotch egg, you’ve got more than enough room in your budget to take them for a dip in some Katsu dipping sauce!

Making the best of eggs sometimes involves baking them in the oven, and we definitely make the most of cheesy, caramelised onion flavours in our Caramelised Onion Quiche. You might expect a recipe like this to be off the table on a slimming-friendly diet, and yet our version comes in at just 164 calories per slice (thank you, clever swaps!).

To make sure our eggs really rise to the occasion, we like to use a blender so the cheesy mixture is as smooth as possible before baking. A good-sized flan dish will also help your golden-topped quiche cook as evenly as possible.

Eggs for Dinner

They say you can’t make an omelette without breaking eggs, and we’re starting to think the same way about pizza. Once you try the fried egg at the centre of our Sausage Egg and Chips Pizza, you’ll understand why! By using a tortilla wrap pizza base instead of dough, we’ve kept the calories nice and low. The egg will let you know when your pizza’s ready – you’ll be able to see that it’s set after around 15 minutes of baking.

Eggs are a key ingredient in all sorts of tasty home-baked comforts, from cakes and eggy bread to egg fried rice and frittata. Egg-based bakes don’t come much more comforting than fluffy Yorkshire puds. Even if we could eat them by the plateful, we know that wouldn’t be very slimming friendly or nutritious! Getting a fix of pudding batter from a hearty, home-baked Toad in the Hole is more than just as good. We love watching it rise in the oven until it’s crisp and golden brown. Bring on the gravy!

Another British classic, you won’t find many dishes as easy and budget-friendly as Corned Beef Hash. By using a low-fat version of traditionally high-calorie tinned corned beef, we’ve made sure each portion is 396 calories – fried egg topping included! 

We’ve even got a festive Christmas Hash you can rustle up. Most of the recipe uses Christmas dinner leftovers, but that doesn’t mean you have to wait until December to enjoy them.

Eggs for Dessert

Eggs play an important role in countless sweet bake recipes; while it’s possible to bake without them, it definitely makes things a little trickier since they’re such a useful ‘glue’. For our Portuguese Custard Tarts recipe, egg white, yolk milk and sweetener form the thick custard filling that makes these pastry nibbles so irresistible. Be careful not to overfill your pastry cases with too much egg, nobody wants Scrambled Egg Tarts for dessert!

Sometimes you need to separate eggs to get the fluffiest results for certain recipes, like our sweet Strawberry Souffle Omelette. We blend the egg yolks with sweetener and whip the egg whites into soft peaks before they’re combined – that way, when you fold them back together and fry them, they’ll rise lighter and more golden than ever in the pan.

With strawberries and plenty of icing sugar, you’ll soon see why this one’s sweet enough to enjoy after dinner!

Last but not least, how about an egg recipe without a single egg in sight? It wouldn’t be fair to talk about eggs without giving an honourable mention to our fun, Easter-inspired Chocolate Creme Egg Cakes. At only 41 calories per fluffy, egg-shaped chocolate sponge, they’re far lower in calories than the Creme Egg treats they’re inspired by.
