Greek-Style Leeks and Rice
A little like a risotto, this dish is our slimming-friendly take on a popular Greek recipe, Spanakorizo. You only need a handful of ingredients and 40 minutes to throw this together, so it’s ideal for a midweek dinner. The leeks cook slowly until they’re lovely and sweet – the flavour contrasts so well with the salty feta cheese. We love the leftovers for lunch!
