To rustle up the fiery cheese sauce, we’ve simmered simple herbs and spices together, and added richness with tomato puree, garlic and ginger. When the spices have mingled, you’ll melt in a tangy handful of reduced-fat Cheddar cheese until irresistibly smooth.

Preheat the oven to 180°C.

Place the cauliflower florets in a large saucepan of boiling water and cook for 4-5 minutes or until just tender. Insert a sharp knife into the thickest part to test. Take care not to overcook, no one likes mushy cauliflower! Drain the cauliflower really well and place in an ovenproof dish.

Put the reduced-fat spread in a medium saucepan and place over a low heat until just melted. Add the curry powder and chilli powder and cook gently for about a minute to release the flavours.

Add the garlic paste, ginger paste and tomato puree, stir in and cook gently for another minute.

Add the milk a little at a time, stirring well between each addition to make sure the mixture is smooth. Heat for a minute or two until the mixture is steaming hot, taking care not to let it boil over.

Mix the cornflour with the water until smooth. Pour into the hot mixture, stirring constantly with a balloon whisk or wooden spoon. Simmer for 3-5 minutes, stirring, until thickened slightly and smooth. Stir in the cheese until melted and season well with salt and black pepper.

Step 7

Pour the sauce over the cauliflower and sprinkle the remaining cheese on top. Place in the preheated oven and bake for about 15 minutes until browned on top. Remove from the oven and sprinkle a few fresh coriander leaves over the top (optional). Serve at once with a main dish of your choice.

How do you know when Curried Cauliflower Cheese is cooked?

Ingredients

  • 600 g cauliflower leaves removed and cut into medium florets
  • 25 g reduced-fat spread
  • 1 tbsp mild curry powder
  • 1 tsp mild chilli powder
  • 1 tbsp garlic paste or 3 garlic cloves, peeled and crushed
  • 1 tbsp ginger paste or 5cm fresh ginger, peeled and grated
  • 1 tbsp tomato puree
  • 500 ml skimmed milk
  • ½ tbsp cornflour
  • tbsp cold water
  • 100 g reduced-fat mature Cheddar cheese finely grated
  • salt and black pepper to taste

For the top

  • 20 g reduced-fat mature Cheddar cheese finely grated
  • a few fresh coriander leaves to garnish (optional)

Recipe notes

Tip: Take care not to overcook the cauliflower when boiling it. It should be just tender after boiling as it will be cooked for a further 15 minutes in the oven later. You need to avoid over cooking, as the cauliflower will become mushy!
Tip: Make sure to drain the cauliflower really well after boiling it. You don’t want excess water in the cooked cauliflower as it will thin the sauce.
Tip: If using fresh garlic, use 3 cloves (peeled and crushed). If using fresh ginger, use a 5cm piece (peeled and finely grated).
