You can’t go wrong when cheese and spuds are involved, and this easy recipe is no exception. Mixed together and baked in the oven until crunchy on the outside, they make for a stunning side dish that you can serve with almost anything.
We love to make them with Parmesan, but it’s no problem if you’d rather use a veggie-friendly Italian-style hard cheese instead. Sprinkle on some fresh chives right before dishing up!

Step 1
Preheat the oven to 180°C. Add the potatoes to a pan of cold salted water. Set on a medium heat and bring to the boil, cook for 10 minutes until just soft.
Step 2
Drain the potatoes and add back to the pan. Spray with low-calorie cooking spray and sprinkle over the garlic granules, onion powder, dried parsley and a little salt and pepper. Toss to coat.
Step 3
Add to the baking tray cut side down. Cook for 15 minutes.
Step 4
Remove from the oven and sprinkle over the Parmesan cheese. Cook for a further 15 minutes.
Step 5
Top with the chopped chives and serve.

How do you know when Parmesan Potatoes are cooked?
You’ll need to par-boil the potatoes for 10 minutes, then place them in the oven until they’re tender on the inside and crispy and golden on the outside. This should take around 30 minutes.
Here in the UK, the standard advice is to cook food until it has reached 70°C and maintained that temperature for 2 minutes. This is to keep you and your family safe!
How long can you keep Parmesan Potatoes in the fridge?
Once you’ve put it out, ideally you should eat these within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Parmesan Potatoes in the fridge for approximately 3 days or so.
Can I freeze Parmesan Potatoes?
Yes you can! This recipe can be frozen before adding the chives, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Parmesan Potatoes?
From chilled: Place in a microwavable container with a loosely fitting lid and heat for 4-7 minutes until piping hot. Alternatively, reheat in a moderate oven until piping hot.
From frozen: Allow to defrost overnight and reheat from chilled.
