Don’t let the simple ingredients fool you, Pan con Tomate may be a straightforward recipe but it’s SO much more than the sum of its parts. Crisp, golden sourdough, ripe tomatoes, a little garlic, and a drizzle of olive oil are all you need to make something delicious. It’s ideal for a light lunch, a starter, or even a quick snack when you fancy something fresh.
One little trick makes all the difference: let the grated tomatoes drain for a few minutes before spooning them onto the toast. It keeps all that lovely fresh flavour while stopping your sourdough from going soggy. Finish with a scattering of fresh chives and an extra drizzle of olive oil, then tuck in while it’s still warm and crunchy. Yummy!

How many calories are in this Pan con Tomate?
There are only 314 calories in one serving of this Pan con Tomate, which means it falls into our Everyday Light category. These are all dishes under 400 calories, ideal for when you’re after a lighter bite (just like the category name suggests!), and they fit with diet plans like Weight Watchers if you’re calorie counting.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight, then you might want to adjust these slightly. You can read more about these recommendations on the NHS website.
Step 1
Place a box grater into a large bowl. Using the side of the grater with the largest holes, grate the tomatoes until you are left with just the skin — discard this.
Step 2
Place a sieve over another bowl and pour the grated tomatoes into it. Let the tomatoes sit for 5 minutes to allow any excess water/juice to drain through.
Step 3
While the tomatoes drain, spray the slices of sourdough with low-calorie cooking spray, then toast in a dry frying pan for a minute on each side — until golden.
Step 4
Once the bread is toasted, cut the garlic in half and rub each half over the slices of toasted bread.
Step 5
Add the drained tomatoes into a mixing bowl. Add in 1/2 tbsp extra virgin olive oil, the red wine vinegar, and a pinch of salt. Mix well to combine.
Step 6
To serve, spoon the tomatoes over the toasted bread and sprinkle with some freshly chopped chives and a drizzle of the remaining olive oil.
What could I serve with Pan con Tomate?
Pan con Tomate is delicious all on its own, or you could serve it with lots of different slimming-friendly options! Here are some ideas:
How do you know when Pan con Tomate is cooked?
You’ll know it’s ready when the sourdough is crisp and golden on both sides with lightly charred edges. The tomato topping should be fresh and juicy but not watery — coating the toast without making it soggy, while the garlic, olive oil, and vinegar create a bright and fragrant finish.
How long can you keep Pan con Tomate in the fridge?
Once you’ve served up your Pan con Tomate, ideally you should eat it straightaway.
If you do hang onto any leftovers, we recommend storing the tomato topping separately, ready to add to your toasted bread once you’re ready. Be sure to refrigerate it in an air-tight container with a lid. You can store Pan con Tomate in the fridge for approximately 3 days or so.
Can I freeze Pan con Tomate?
No, we do not recommend freezing this recipe.
