Don’t let the simple ingredients fool you, Pan con Tomate may be a straightforward recipe but it’s SO much more than the sum of its parts. Crisp, golden sourdough, ripe tomatoes, a little garlic, and a drizzle of olive oil are all you need to make something delicious. It’s ideal for a light lunch, a starter, or even a quick snack when you fancy something fresh.

One little trick makes all the difference: let the grated tomatoes drain for a few minutes before spooning them onto the toast. It keeps all that lovely fresh flavour while stopping your sourdough from going soggy. Finish with a scattering of fresh chives and an extra drizzle of olive oil, then tuck in while it’s still warm and crunchy. Yummy!

How many calories are in this Pan con Tomate?

Place a sieve over another bowl and pour the grated tomatoes into it. Let the tomatoes sit for 5 minutes to allow any excess water/juice to drain through.

While the tomatoes drain, spray the slices of sourdough with low-calorie cooking spray, then toast in a dry frying pan for a minute on each side — until golden.

Once the bread is toasted, cut the garlic in half and rub each half over the slices of toasted bread.

Add the drained tomatoes into a mixing bowl. Add in 1/2 tbsp extra virgin olive oil, the red wine vinegar, and a pinch of salt. Mix well to combine.

To serve, spoon the tomatoes over the toasted bread and sprinkle with some freshly chopped chives and a drizzle of the remaining olive oil.

Ingredients

  • 3 vine tomatoes
  • low-calorie cooking spray
  • 4 slices wholemeal sourdough, approx 45g each
  • 2 large garlic cloves, peeled
  • 1 tbsp virgin olive oil
  • 1/2 tsp red wine vinegar
  • 1 pinch sea salt
  • 1 tbsp fresh chives, finely chopped

Instructions
