These Chicken Curry Skewers are packed with flavour, and the best part is that the hardest job is remembering to pop the chicken in the marinade the night before!

It’s a super simple mix of ingredients, but an overnight soak gives the chicken plenty of time to become beautifully tender and full of flavour. We’ve threaded peppers and onion onto the skewers too, adding even more colour and a little extra sweetness as everything cooks.

How do you know when your Chicken Curry Skewers are cooked?

Ingredients

  • 350 g diced chicken breast
  • 2 tbsp fat-free Greek yoghurt
  • 2 tbsp mild curry powder
  • 1 tbsp mango chutney
  • 1/2 tbsp tomato purée
  • 1/2 tsp mild chilli powder
  • 1 tsp garlic granules
  • 1/2 lemon, juiced
  • 1 red pepper, deseeded and chopped into chunks
  • 1 red onion, peeled and chopped into chunks

To serve:

  • 4 tbsp fat-free Greek yoghurt
  • 3 g fresh coriander, finely chopped
