Hidden under the golden baked potato top is a hearty, mixture of onions, vegetables and 5% minced beef in a deep, rich gravy.

If you don't have a microwave, you can cook the potatoes on a hob. Add the sliced potatoes to a saucepan and cover with cold water. Bring the water to the boil then lower the heat and simmer for 5-8 minutes until the potato slices are soft when a knife is inserted but still holding their shape. Drain.

How many calories are in this Minced Beef Hotpot?
There are 415 calories in each portion of our slimming friendly Minced Beef Hotpot. This means it falls into our Weekly Indulgence recipe category.
This recipe is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Place the sliced potato in a large microwavable bowl, cover with water and microwave on full power for 5 minutes. Drain them carefully and set aside.
Step 2
Pre heat the oven to 180°C.
Step 3
Sauté the chopped onions in a large pan sprayed with some low calorie cooking spray. Cook until they start to soften.
Step 4
Add in the mince and continue cooking for another 5 minutes. Add the carrots and cook until the mince has started to brown.
Step 5
Stir in the Henderson’s Relish, red wine vinegar, Balsamic vinegar, and thyme, then add the made up beef stock. Bring to the boil and allow to simmer for 10 minutes. The liquid should reduce by about half.
Step 6
Stir in the peas, then sprinkle on half of the Xanthan Gum and stir briskly to make sure it’s mixed in thoroughly and there are no lumps. If the mince is still a bit too thin add some more Xanthan Gum
Step 7
Check the seasoning, then pour the thickened mince mixture into an ovenproof dish, then top with the sliced potato.
Step 8
Season the potato with some sea salt and freshly ground black pepper, then cover with some foil and cook for about 35 minutes. Remove the foil and return to the oven for another 25 minutes or so, until the potatoes are cooked through and golden brown.
Step 9
Remove from the oven and serve.
What should you should serve with Minced Beef Hotpot?
Any of the following go really well with Minced Beef Hotpot. It’s one of those dishes that goes with pretty much anything. It’s so hearty it can of course be eaten on its own!
Whatever accompaniment you choose, don’t forget to account for the extra calories and/or other nutritional values.
Can you cook Minced Beef Hotpot another way?
You need to bake the finished dish in the oven for a crispy, golden top. But you could cook the minced beef filling in a slow cooker.
Slow Cooker: Brown off the mince and vegetables, place all of the other ingredients for the minced beef filling, except the xanthan gum, into the slow cooker and cook on high for 4-5 hours. Remove the lid and reduce to thicken, adding in the xanthan gum a little at a time until it has reached your desired consistency.
How do you know when Minced Beef Hotpot is cooked?
You should cook this recipe until the potatoes are crisp and golden, and the filling is bubbling and piping hot.
This should take approx 1 hour in the oven, after the minced has been cooked on the hob.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Minced Beef Hotpot in the fridge?
Once you’ve served it, you should ideally eat it straight away.
If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Minced Beef Hotpot in the fridge for approximately 3 days or so.
Can I freeze Minced Beef Hotpot?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Minced Beef Hotpot?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Hello looking for advice please I have made the Hot Pot and got my husband too as well both of us ended up with almost raw potato following the instructions, where are we going wrong?

It sounds like the potato may have been sliced much too thickly, meaning that it would take a lot longer to cook.
