We adore cheesecake and we missed it dearly when we started on our weight loss journey. These low calorie, low Point, Cheesecake Stuffed Strawberries are the perfect solution!
Our Cheesecake Stuffed Strawberries are soooo easy to make, so there’s no waiting around for them to set like you would with a normal cheesecake! You could even have some fun and play around with flavours by using a different kind of biscuit.
Bourbons, custard creams, ginger nuts – you don’t even need a whole biscuit. What you must do though, is remember to adjust the nutritional values accordingly!

Step 1
Remove the tops of the strawberries.
Step 2
Using a small sharp knife, cut out a cone shape inside the middle of each strawberry – you want a small hole in the middle.
Step 3
Mix together the quark, cream cheese, sweetener and vanilla extract and beat until smooth.
Step 4
Fill a small freezer bag with the cream cheese mixture. Make sure you get all the mixture in one corner.
Step 5
Seal the bag and cut the corner. The hole should be quite small so you can pipe inside the strawberries.
Step 6
Squeeze the filling into each strawberry and sprinkle with digestive crumbs.
Step 7
Keep them in the fridge until ready to serve.

Hi Becky, it’s best to use quark as it has a thicker texture than Greek yogurt so when mixed with the cream cheese makes a more solid filling for the strawberries.

I made these and the mixture didn’t thicken. I followed the recipe apart from having to use icing sugar and I didn’t put vanilla extract in. So ended up having to dip the strawberries in the mixture which still tasted amazing but where did I go wrong??

I made these little beauties tonight for after dinner. Went down well with the family so will be definitely making these again. I blitzed my sukrin sugar and made my own icing sugar which worked out great.
