It’s a great way to use up that Christmas vodka lurking at the back of the cupboard and it’s perfect recipe for easy entertaining, as you can have it done and on the table in less than 30 minutes.
Usually Vodka Pasta, or Pasta alla Vodka, is made with heavy cream, which isn’t very slimming friendly. We’ve cut the Points and Calories right down reduced fat cream cheese.
You could always add some chicken or prawns if you don’t fancy the vegetarian version – similarly you could substitute the Henderson’s Relish for Worcestershire Sauce depending on your preferences!

Step 1
Cook the pasta according to instructions on the pack. It will probably take 10-12 minutes.
Step 2
While the pasta is cooking, sauté the onions, peppers, spring onion and garlic in a little low calorie cooking spray until they have started to soften.
Step 3
Remove from the heat, add the tomato puree and vodka and stir well.
Step 4
Return to the heat and stir in the tin of chopped tomatoes, Henderson’s Relish and veg stock.
Step 5
Simmer for 5 minutes, add the tomato halves. Check the pasta and drain when cooked.
Step 6
Remove the sauce from the heat, stir in the cream cheese and season to taste. Stir in the chopped basil.
Step 7
Mix the pasta and sauce together, and serve sprinkled with some chopped fresh basil (optional)

How do you know when this Creamy Tomato Vodka Pasta is cooked?
Cook the pasta according to instructions on the pack. It will take around 10-12 minutes.
After adding the tin of chopped tomatoes, Henderson’s relish and veg stock, simmer for five minutes and add the tomato halves.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep this Creamy Tomato Vodka Pasta in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Creamy Tomato Vodka Pasta in the fridge for approximately 3 days or so.

Yes you can! This recipe can be frozen, but please remember to do the following;

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Where on earth can I get this Quark from?? Googled most supermarkets today and nobody stocks it??? What can I use instead and what proportions to achieve the same sort of taste as this recipe??? Otherwise it’s a pointless recipe if said ingredients do not exist?

Hey Kat, most supermarkets do sell quark it could just be that your local ones are currently out of stock. You could swap for cream cheese which will work just as well, hope that helps!

Made this today & it was delicious. I couldn’t find quark so I used Philadelphia instead. I will definitely make this again . Definitely a recipe you can adapt yourself by adding chicken or more vegetables or chilli.

Yes you can freeze the leftovers, but you may need to add a little more tomato before you freeze it as it’s not a very ‘saucy’ dish anyway and it may go a little dry otherwise.

Yes you can leave the vodka out, but you will probably have to add a drop more water to the stock cube just so you have enough of the sauce to coat the pasta

Most, if not all supermarkets now seem to stock Quark, even Aldi. They all do their own brand as well as the most well known one from Grahams Farm. It should be quite easy to get your hands on some 🙂
