We’ve used filo pastry in these Lemon and Blueberry Tarts to to give them a really nice crisp, crunch while keeping the calories and fat low.

Lemon and blueberries is such a classic flavour pairing and the combination is both refreshing and indulgent. The lemon juice adds a nice hint of tanginess to the creamy blueberry curd in these tarts and makes them super moreish!

These Lemon and Blueberry Tarts are best enjoyed soon after filling, as the curd can start to make the filo a little soggy if they’re left out for too long. If you want to make these ahead of time, then simply store the filo and curd separately and fill just before serving!

We’ve used a shallow muffin (or fairy cake!) tray for this recipe, like this one!

To make the curd, you’ll need to heat the filling in a heatproof glass bowl. A set just like this one is perfect for this.

Give the pastry a good spray of low calorie cooking spray, then place another square on top, positioning it so you have a star shape and press the pastry squares together.

Spray the filo cups with low calorie cooking spray, then place in the oven for 8-10 minutes, until the pastry is crisp and golden.

Now, make the blueberry curd filling.

Reserve a few blueberries for decoration then place the rest in a small saucepan along with the lemon juice and sweetener. Simmer for 2-3 minutes until the blueberries begin to break down then mash or blend – it doesn’t need to be completely smooth.

Whisk together the eggs cornflour and blueberry mix in a glass bowl and place over a pan of simmering water.

Stir for 8-10 minutes until the curd thickens.

Stir in the yoghurt and allow to cool.

Ingredients

  • 40 g filo pastry (1 or 2 sheets depending on brand)
  • 150 g blueberries
  • 2 eggs
  • 1 lemon juiced
  • 3 tbsp granulated sweetener
  • 2 tbsp fat free Greek yoghurt
  • 1 tsp cornflour heaped
  • low calorie cooking spray
