Everyone loves a hearty stew, and it’s one of our go-to dishes as the nights start to get darker and colder. You can’t beat a bowl of hot stew, and we’ve packed this one with all the flavours of Italy!

We used Heck Chicken Italia sausages in keeping with the theme, but any low-fat sausage works well, even pork sausages.

Stews are a great way of sneaking in extra veggies for a fussy family too. We’ve used peppers, onions and courgettes, but you could throw in any leftovers to make this dish even more budget-friendly. Simply finely dice and add.

With a rich, garlicky sauce, this stew really packs a punch in terms of flavour! When you add in beans and pasta, you have a really filling dinner that’s satisfying and substantial for any night of the week.

Serve with a wedge of crusty bread for dipping – delish!

What diets is this Italian-Style Sausage Stew suitable for?

Italian-Style Sausage Stew can be suitable for gluten free diets if you swap out the stock cubes and pasta for gluten free versions. Alternatively, you could use potatoes instead of pasta.

Do you need any special ingredients to make Italian-Style Sausage Stew?

We’ve used a specific brand of sausages, Heck Chicken Italia, as they’re already lightly spiced with Italian herbs. They’re available at most supermarkets, although you could use any sausage you like, but be mindful of any changes to the nutritional info!

How many calories are in this Italian-Style Sausage Stew?

This Italian-Style Sausage Stew recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Spray the pan with low calorie cooking spray.

Over a medium to high heat, fry the sausages for around 4-5 minutes until nicely browned.  They don’t need to be fully cooked through as they will be returned to the pan later. Remove and set aside.

Give the pan another spray with low calorie cooking spray, then add the onions, peppers, carrots and courgette and sauté for 6-8 minutes until the vegetables are starting to soften.

Add the garlic and herbs and continue to cook for 1 minute.

Add the stock cubes to the water and pour into the pan along with the tomatoes and balsamic vinegar and bring to a simmer.

Cut the sausages into 3 and return to the pan.

Cover and simmer over a low heat for 35 minutes.

Step 8

Add the pasta and beans and stir well. Cover and simmer over a low heat for a further 15-20 minutes (this will depend on the type of pasta you use.) Remember that the pasta will absorb some liquid, so add a little more water if you think it is looking too dry.

Taste and season with some salt and pepper if desired.

  • 8 low fat sausages
  • 2 onions peeled and diced
  • 2 peppers (any colour) diced
  • 2 carrots peeled and sliced
  • 1 courgette sliced
  • 400 g tin chopped tomatoes
  • 400 g tin cannellini beans drained
  • 4 cloves garlic crushed
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • 2 chicken stock cubes
  • 750 ml boiling water
  • 1 tbsp balsamic vinegar
  • 150 g dried pasta shapes  e.g. fusilli, penne or macaroni
  • low calorie cooking spray
  • salt and freshly ground black pepper
  • 10 g grated parmesan (optional)

    Hi SAnderson, yes, you could substitute potatoes for the pasta if you prefer. Cut them into small evenly sized chunks and add to the pan in step 3 with the onions, peppers, carrots and courgettes. Hope this helps.

Sounds silly, but if i was this for 2 portions instead of 4, would it be 1 stock cube ton375ml water? When i asjust the portions it says 1 stock cube but still to 750ml water?

When you say 150g of dried pasta is that 150g dried before it’s cooked or 150g of cooked pasta? Just it swelled up a lot and there was loads of it. Thank you

    Yes, they could. Butter beans would probably work better as they have a similar creamy texture to canellini. Chickpeas have a harder texture.
