We have given the classic Coronation Chicken a slimming friendly, veggie makeover! Chickpeas are the ideal choice if you’re looking for a meat-free version or if you’d like to cut down on your meat consumption. Full of protein, filling and low fat, they perfectly complement the creamy curry dressing.

We’ve used fat free Greek yoghurt to make the dressing instead of mayonnaise, to keep the calories and Points down without compromising on the creamy taste that’s essential for this recipe!

Coronation Chickpeas are super versatile. Not only can it be a tasty, light lunch if served on a bed of mixed salad, but you can take it along on a picnic to serve over crackers or a wholemeal roll. For something more substantial, try it as an alternative tasty topping on a jacket spud!

Ingredients

  • 1 tin chickpeas 400g tin, drained and rinsed
  • ½ small red onion finely chopped
  • ½ red pepper finely diced
  • 1 small mango peeled and cut into small chunks
  • 100 g fat free Greek yoghurt
  • 2 tsp red wine vinegar
  • 2 tsp mild curry powder
  • 1 tsp granulated sweetener or sugar
  • ½ tsp garlic granules
  • a small bunch of coriander chopped
  • salt and freshly ground black pepper
  • 2-3 tbsp water
