Chicken Kyiv Pasta Bake
Our golden Chicken Kyiv Pasta Bake is every bit as delicious as it looks. The indulgent-seeming, creamy filling borrows the best of chicken Kyiv flavours, by combining chicken pieces, leeks and mushrooms in a rich, garlicky, homemade pasta sauce.
If the sumptuous filling doesn’t win you over, the oh-so-crunchy breadcrumb topping definitely will. Super simple and slimming friendly, it’s sure to be an instant hit with the whole family!
It’s satisfying all on its own, or you can add a pop of green to your plate with some crunchy Garlic Green Beans.
Roasted Potatoes with Herbs and Lemon
Baked to just the right level of crispy perfection, our Roasted Potatoes with Herbs and Lemon are perfect for springtime roast dinners. Lighter than standard roasties, with a delicately herby, citrusy glaze – we’ve braised them in a garlic-infused stock, to make sure they’re fluffy and flavoursome throughout.
They’re especially scrummy when paired with a fragrant, Greek-inspired main dish, like our summery Chicken Souvlaki Tzatziki.
You can prepare them for vegan and gluten-free diets (when made with a gluten-free stock cube!), so they’re the perfect pairing with a plant-based feast too.
Just be sure to double and triple-check all of your ingredients, if you are cooking for anybody with allergies.
Spicy Chicken Noodles
When you’re looking to order a fast, flavour-filled fakeaway, our Spicy Chicken Noodles truly deliver. Inspired by the popular Asian street food dish, ‘Mee Goreng’, our dish recreates the same sweet-and-savoury goodness for a fraction of the takeaway calories.
To make our fried noodles extra-tasty on a budget, we’ve wok-fried our chicken and vegetables together with an easy combination of store cupboard staples.
Each slurp-ready portion is light enough to tuck into with your chopsticks at lunchtime without taking you off track, at just 321 calories each.
Mushroom Chilli
There’s always room on our midweek menu for Mushroom Chilli. Just as versatile and delicious as Chilli con Carne, it’s well worth making space in the freezer for extra portions; this batch-cook dream reheats really well on rainy days.
We’ve kept the spices in our homemade sauce mild to medium, but you can turn up the heat with extra chilli flakes, if you’ve got a hankering for fiery flavours.
Serve with fluffy rice, sweet potato fries or mashed potatoes for a surefire, family-friendly winner.
Tuscan Chicken Pasta Bake
As soon as you try our Tuscan Chicken Pasta Bake, you’ll want to eat it again and again. Inspired by our hugely-popular Creamy Tuscan Chicken recipe (from Pinch of Nom: Quick and Easy, pages 116-117), you’ll never regret working this hearty, home-bake into your midweek meal plan.
Our filling is made up of a blend of ingredients in a seriously-cheesy pasta sauce, including sweet, sun-dried tomatoes, chicken and garlic.
Topped with melty mozzarella and fresh tomato slices, this medley of Italian-style flavours never fails to impress.
Mexican Style Tostadas
With refried beans, zingy lime salsa, a poached egg and cheese on a crispy tortilla base, our Mexican-style Tostadas take lunchtimes up a notch. A vibrant, colourful dish, we’ve lowered the calories by preparing our medium-spiced beans, and zingy lime salsa, from scratch.
Indulgent and crunchy, there’s nothing to stop you experimenting with different fiesta-style toppings to personalise your cheesy-topped plate.
Why not try adding chicken, ham or tinned tuna, for a flavoursome protein boost?
Curried Creamy Carrot Soup
Wholesome, nutritious comfort food, you’ll definitely want to mop up what’s left of our Curried Creamy Carrot Soup with a crusty, wholemeal bread roll. By using reduced-fat cream cheese instead of low-fat versions, we’ve guaranteed that every portion freezes and reheats without losing rich, irresistible silkiness.
With blended carrots, onions and potatoes in our nutritious base, every curry-infused portion is extra-satisfying, at roughly 122 calories per portion.

Cheeseburger Dirty Rice
It’s truly hard to believe that our crowd-pleasing Cheeseburger Dirty Rice is slimming friendly! With seasoned mince, bacon, gherkins, tomatoes and cheese, you’re never short on flavour – even before you’ve added a drizzle of our homemade burger-style sauce.
Ready in 35 minutes, it’s far better for you and your budget than restaurant versions (and only 340 calories per fluffy rice portion!).
It’s a must-try for your next burger-inspired feast with a side of zingy salsa and coleslaw.
