There is no cooking required in this recipe so it’s perfect for a quick mid-week dessert or as an indulgent brunch.
This recipe combines sweet, creamy and crunchy for a truly delicious dessert. We have used cornflakes for our crunch but you could use something other than cornflakes in this recipe…maybe crush up an Alpen Light bar!
Whatever you use, it’s better to assemble it when you’re ready to eat so that the cereal layer doesn’t go too soggy.

Do you need any special ingredients to make Summer Berry Dessert?
We use Sukrin Icing which is an all-natural granulated stevia sweetener alternative to icing sugar with zero calories.

Step 1
Mix the quark, yogurt, granulated sweetener and vanilla extract together well. You can add a little more sweetener or vanilla if you prefer it a bit sweeter.

Spoon a layer of the quark mixture into the bottom of a glass, then add a layer of strawberries.
Step 3
Then layer the following, quark mix > blueberries > quark mix > cornflakes > quark mix.
Step 4
Finally arrange the top layer of strawberries and garnish with a sprig of mint.

Instructions
- Add the quark, yoghurt, granulated sweetener and vanilla extract to a bowl and mix together well. You can add a little extra sweetener or vanilla if you prefer it a bit sweeter.
